CARAMELIZED ONION SCONES RECIPE | LAND O’LAKES

- Caramelize onions by melting 1 tablespoon Butter with Olive Oil & Sea Salt in 10-inch nonstick skillet over medium heat. Add onions, 1/8 teaspoon salt and pepper. Cook, stirring occasionally, 30-40 minutes or until onions are golden brown and reduced to 1/2 cup. (Reduce heat, if necessary, to keep from burning.) Remove from heat; cool completely. Coarsley chop onions; set aside.
- Heat oven to 400°F. Line baking sheets with parchment paper; set aside.
- Combine flour, baking powder, 1 teaspoon salt and baking soda in large bowl. Cut in 2/3 cup Butter with Olive Oil & Sea Salt with pastry blender or fork until mixture resembles coarse crumbs. Stir in caramelized onions, cheese and green onions. Stir in 2/3 cup buttermilk just until moistened.
- Pat dough into 8-inch circle. Cut into 8 wedges. Place onto prepared baking sheets. Brush tops with buttermilk.
- Bake 18-20 minutes or until bottoms are golden brown and sides of scones are set.

- Heat the oven to 220c/fan200c/gas7. Put the flour and butter into a food processor and pulse until the texture of breadcrumbs. Tip into a bowl and stir in the mustard powder, paprika, 75g of the cheese and the spring onions. Season really well and toss everything together.
- Add the milk gradually and bring together to a soft dough (add another splash of milk if it seems too dry). Tip onto a floured surface and gently pat into a round. Put on a buttered baking sheet and mark into 8 wedges (but don’t go all the way through). Beat the egg with the mustard and a splash of milk and glaze the top. Sprinkle over the rest of the cheese. Bake for about 20-22 minutes until golden and cooked through.
