Chia Seed Protein Bites Recipe: How to Make It image

I keep these little bites on hand in my refrigerator and grab them for breakfast or a snack when I'm in a hurry. We have a lot of food allergies in our family and I like to keep healthy snacks around that everyone can eat. This recipe has no gluten, eggs, dairy or corn, so it's the perfect go-to treat in our house. —Tanja Miller, Peoria, Arizona

Yield about 2-1/2 dozen.

Number Of Ingredients 7

1-1/2 cups quick-cooking oats
1/2 cup almond butter or creamy peanut butter
1/2 cup chia seeds
1/2 cup honey
1/4 cup vanilla or chocolate protein powder
1/4 cup unsweetened shredded coconut
Additional unsweetened shredded coconut, optional

Steps:

  • In a large bowl, combine the first 6 ingredients. Refrigerate 1 hour or until firm enough to roll. Shape into 1-1/2-in. balls. Roll in additional coconut if desired. Store in the refrigerator.

  • Preheat oven to 350ºF. Prepare a mini muffin pan with nonstick spray.Combine the first 9 ingredients (oat flour through salt) in a medium bowl. Add dried fruit, butter, honey, vanilla, and egg white. Mix everything together thoroughly—using your hands helps! Your mixture should resemble oatmeal cookie dough.Fill about 16 muffin molds with the dough, pressing them down and filling them to the top. Bake for about 10 minutes or until sides are golden brown. Let them sit for 10–15 minutes before trying to remove them from the pan.Let them cool before eating. Store in an airtight container at room temperature. They should last for several days. I actually like them better the day after I made them!

CRISPY BUFFALO CAULIFLOWER BITES - FORKS OVER KNIVES
It took a lot of trial and error to find the right coating that would not draw out the moisture and would make the florets crisp, so I am pleased that it has turned out to be a very simple recipe. You will not need to add salt as the sauces have enough salt to season them. Either a smoky barbecue sauce or Frank’s hot sauce would work well, but if you are like me and prefer sweet and spicy, then try a little bit of both. Serve with ranch or Caesar dressing on the side if you wish, or whip up a batch of Spinach Ranch Dip. Note: The buffalo cauliflower bites will get softer once they are coated with the sauce, so hold off tossing until the very last minute
