  • For the mu shu, place pork, chicken or tofu in a second bowl
  • If using chicken or pork, add cornstarch, toss, then add marinade and combine
  • For meat, marinate in the fridge for a little bit
  • If using tofu, add half the marinade and toss to coat
  • Heat a large nonstick skillet over high heat with oil, 2 turns of pan or a thin layer of spray
  • Stir-fry the tofu, pork or chicken and brown well, remove to platter and cover to keep warm
  • Add more oil to coat, then stir-fry mushrooms to brown and remove to a bowl
  • In a separate small nonstick pan over medium-high heat, coat pan with oil, scramble eggs, add salt, brown and roll into a thin omelet
  • Slide onto counter or cutting board, then slice
  • Add cabbage to the same large nonstick skillet and toss 3 to 4 minutes to soften
  • Add carrots, stir, then add onion whites, ginger, garlic and, if using, chile pepper
  • Add a few splashes soy, a few pinches black pepper, and a drizzle of sesame oil, then toss, add mushrooms back to the mix and cook a few minutes more
  • Add egg, toss, then taste cabbage for seasoning
  • Add more soy sauce, if necessary, then combine with onion greens
  • Heat flour tortillas until slightly charred but still soft, warming on each side in a cast iron skillet or over a flame on a gas stovetop
  • Transfer cabbage to serving platter
  • Serve mu shu cabbage and meat with plum sauce and tortillas
  • Wrap the rolls like burritos

MOO SHU PORK RECIPE - FOOD.COM
This is a popular classic in the Chinese restaurant scene. You can replace the pork with chicken or shrimp, but the original recipe is with pork. My parents say this recipe tastes better than the ones they've had in Canadian Chinese restaurants. Once you get the hang of making it, you'll want to make it often. If you don't want to spend the time making pancakes, you can use soft tortillas to replace. The homemade pancakes are much better though. This dish goes well with hot and sour soup, for a Beijing style meal.

  • Heat a skillet, brushing the inside bottom with sesame oil. Add one of the double pancakes and cook 30 seconds. Flip and cook another half minute, taking care that they do not brown. Quickly lift the pancake away from the hot surface and slap it down on the work surface. While the pancake is still warm, peel the double cake apart into two pancakes. Reserve. Repeat until all of the cakes have been completed. Stack in a sheet of foil. Carefully seal the foil with pancakes into a packet and steam 20-30 minutes before use. Serve warm.

NEW MUSHU MEAT RECIPE - SIMPLE CHINESE FOOD
Mushu meat is a common Chinese dish. It belongs to Shandong cuisine among the eight major cuisines. It is often misused as Mushu meat and alfalfa meat. Its dishes are made by mixing pork slices with eggs, fungus, etc. The scrambled eggs are so yellow that they are broken and resemble mux. Muxiu meat originally appeared in the Qufu Confucian House menu. Its raw materials include pork, eggs, and fungus, as well as magnolia slices. After the dish was introduced to Beijing and other places, due to the lack of bamboo shoots in Beijing, magnolia slices were gradually replaced by daylily and cucumber slices.
