Mini Ham 'n' Cheese Frittatas Recipe: How to Make It image

I found this recipe a few years ago and tried to make it with it with a few changes. I'm diabetic, and this fits into my low-carb and low-fat diet. Every time I serve a brunch, the frittatas are the first thing to disappear, and nobody knows they are low fat! —Susan Watt, Basking Ridge, New Jersey

Number Of Ingredients 8

6 large eggs
4 large egg whites
2 tablespoons fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons minced fresh chives
3/4 cup cubed fully cooked ham (about 4 ounces)
1 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 375°. In a bowl, whisk the first 5 ingredients until blended; stir in chives. Divide ham and cheese among 8 muffin cups coated with cooking spray. Top with egg mixture, filling cups three-fourths full. , Bake until a knife inserted in the center comes out clean, 22-25 minutes Carefully run a knife around sides to loosen.

Cooking spray
½ cup finely chopped onion
? cup chopped reduced-fat ham (about 2 ounces)
? cup (about 1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese
2 tablespoons chopped fresh chives
? teaspoon dried thyme
? teaspoon black pepper
4 large egg whites
1 large egg

Steps:

  • Preheat oven to 350°.
  • Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 2 minutes or until crisp-tender. Add ham; sauté 3 minutes. Remove from heat; cool 5 minutes. Combine remaining ingredients in a large bowl; stir with a whisk. Add ham mixture, stirring with a whisk. Spoon mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350° for 20 minutes or until set.
