TOP SECRET RECIPES | POPEYES SPICY MAYONNAISE
The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is crazy good, but with spicy mayonnaise, that sandwich is great. You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp. AIR FRYER "FRIED" AVOCADO TACOS - GOOD HOUSEKEEPING
Take your avocados to the next level by air frying them and stuffing them in a tortilla for these crispy air fried avocado tacos.

- In a small bowl, whisk together the flour and ¼ teaspoon each salt and pepper. Lightly beat the egg whites in a second small bowl. In a third small bowl, combine the panko with the oil. Cut avocados into ½-inch-thick slices. Working with one slice at a time, coat avocado slices lightly in flour, then in the egg, letting any excess drip off and finally in the panko, pressing gently to help it adhere. Spray or brush the air fryer basket with oil. Spray or brush the avocados. In batches, place the avocado slices in the basket in a single layer and air-fry at 400°F until golden brown, 6 minutes. Meanwhile, finely grate the lime zest into a large bowl, then squeeze in 2 tablespoon juice. Whisk in the mayonnaise and a pinch of salt. Add the cabbage, scallions and jalapeño and toss to coat; fold in the cilantro. Serve the avocados and slaw in tortillas with lime wedges and sour cream if desired.

- Combine the cream cheese, mayonnaise, sour cream, dill, shallot, capers and lemon zest and juice in a food processor. Process until well combined. Add the smoked salmon and pulse just until the salmon is incorporated but not totally pureed, about 10 pulses. Scrape the dip into a bowl. Serve with vegetables.
