1-1/3 cups heavy whipping cream
3 large egg yolks
1/2 cup packed brown sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon maple flavoring
TOPPING:
1-1/2 teaspoons sugar
1-1/2 teaspoons brown sugar

Steps:

  • In a small saucepan, heat cream until bubbles form around sides of pan. In a small bowl, whisk the egg yolks, brown sugar and cinnamon. Remove cream from the heat; stir a small amount of hot cream into egg mixture. Return all to the pan, stirring constantly. Stir in maple flavoring., Transfer to three 6-oz. ramekins or custard cups. Place in a 6-qt. slow cooker; add 1 in. of boiling water to slow cooker. Cover and cook on high for 2 to 2-1/2 hours or until centers are just set (mixture will jiggle). Carefully remove ramekins from slow cooker; cool for 10 minutes. Cover and refrigerate for at least 4 hours., For topping, combine sugars and sprinkle over ramekins. Hold a kitchen torch about 2 in. above custard surface; rotate slowly until sugar is evenly caramelized. Serve immediately., If broiling the custards, preheat broiler and place ramekins on a baking sheet; let stand at room temperature for 15 minutes. Broil 8 in. from heat until sugar is caramelized, 3-5 minutes. Refrigerate until firm, 1-2 hours.

2 cups whipping cream
2 whole eggs
2 egg yolks
2/3 cup real maple syrup
Dash salt
6 tablespoons maple sugar

Steps:

  • Heat oven to 325°F. In 2-quart saucepan, heat whipping cream to simmering over medium heat; remove from heat. In medium bowl, beat whole eggs, egg yolks, syrup and salt with whisk. Gradually stir in warm whipping cream. Pour into 6 (4-oz) ramekins or custard cups. Place ramekins in 13x9-inch pan. Place pan in oven. Pour hot water into pan to within 1/2 inch of tops of cups.
  • Bake 1 hour 10 minutes or until knife comes out clean. Remove cups from water. Place on cooling rack; cool 30 minutes. Cover tightly with plastic wrap; refrigerate until well chilled. Set oven control to broil. In food processor, place maple sugar. Cover; process until sugar is finely chopped. Uncover custard cups; gently blot any condensation on custards with paper towel. Sprinkle custards evenly with sugar. Place in 15x10x1-inch pan. Broil with tops 4 inches from heat about 3 minutes or until sugar is caramelized. Serve immediately.

A knife inserted in center should come out clean, though center will still be soft. Using tongs, remove ramekins.
