4 tablespoons unsalted butter
1/4 cup flour
2 1/2 cups milk
16 ounces shredded cheddar cheese, about 4 cups
4 ounces cream cheese, room temperature
1 lb elbow macaroni, cooked al dente according to package instructions
8 slices bacon, cooked and crumbled
2 large eggs, lightly beaten
1 tablespoon kosher salt
1 tablespoon black pepper
1/3 cup breadcrumbs, plus additional for coating
1/2 cup half-and-half
2 cups shredded cheddar cheese
2 slices bacon, cooked and crumbled
1/2 bunch chives, chopped

Steps:

  • Mac ‘n’ Cheese:.
  • Preheat oven to 375 degrees. Grease a 12 cup bundt pan with nonstick cooking spray. Coat pan with bread crumbs as if flouring the pan.
  • In a dutch oven melt butter over medium high heat. Once the butter has melted whisk in the flour to form a roux. Gradually whisk in milk until there are no lumps. Whisk in both cheeses.
  • Once the mixture is smooth turn off the heat and stir in the cooked pasta and bacon. Season with salt and pepper.
  • Stirring quickly add the eggs being sure not to let them scramble.
  • Spoon the mixture in the prepared bundt pan. Use a spatula to press the pasta down to create an even layer. Sprinkle the bread crumbs over the top and bake for 40-45 minutes until golden brown.
  • Allow to cool for 15 minutes. Use a rubber spatula to loosen the sides of the pan before removing.
  • Serve with cheese sauce and garnish with crumbled bacon and chives.

  • Bring the half and half to a simmer in a saucepan over medium heat. Add the cheese in small handfuls and whisk until smooth.

We made our favorite mac and cheese dinner even cheesier by adding Colby-Monterey Jack cheese sticks to an already-cheesy sauce, and then we turned it into the ultimate comfort food by stuffing it into a crescent ring. Genius? We think so. Kid-approved? Most definitely.

6 oz (from 8-oz package) cream cheese, cut into cubes
2 cups shredded sharp Cheddar cheese (8 oz)
2 tablespoons milk
3 cups cooked elbow macaroni
2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
6 sticks (1 oz each) Colby-Monterey Jack cheese sticks, unwrapped, cut in half crosswise
2 tablespoons butter, melted
1/4 teaspoon garlic powder
Chopped green onions, if desired

Steps:

  • Heat oven to 375°F. Line large cookie sheet with cooking parchment paper.
  • In large microwavable bowl, microwave cream cheese and shredded cheese uncovered on High 2 to 3 minutes, stirring every 30 seconds, until blended and smooth. Stir in milk. Stir in cooked macaroni. Set aside.
  • Unroll both cans of dough; separate into 16 triangles. On cookie sheet, arrange triangles in ring so short sides of triangles form 5-inch circle in center. Dough will overlap. Dough ring should look like the sun.
  • Spoon macaroni mixture on the half of each triangle closest to center of ring. Place halved cheese sticks evenly on top of macaroni mixture with cut ends facing center of ring; press slightly into filling.
  • Bring each dough triangle up over filling, tucking dough under bottom layer of dough to secure it. Repeat around ring until entire filling is enclosed (some filling might show a little). In small bowl, mix melted butter and garlic powder. Brush on top of dough ring.
  • Bake 20 to 25 minutes or until dough is golden brown and thoroughly baked. Let stand 10 minutes before cutting into slices. Sprinkle with chopped green onions.

  • Cook the macaroni until very firm. The macaroni should be too firm to eat right out of the pot. Drain.  In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Cook for 5 minutes until very thick. Reduce the heat to low. Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the egg. Whisk together till smooth. Pour the egg mixture into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add the salt, seasoned salt and pepper. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT. Pour in the drained, cooked macaroni and stir to combine. Serve immediately (very creamy) or pour into a buttered baking dish, top with extra cheese, and bake at 350° for 20 to 25 minutes, or until bubbly and golden on top.

OOEY GOOEY MAC 'N CHEESE BY MAGGIE | JUST A PINCH RECIPES
Sometimes you just have to think outside the "Blue Box" of mac and cheese & throw your diet out the window ! I have always loved that "Blue Box" mac & cheese but sometimes you just need more. So I headed to the always faithful little bits of this and that section of the fridge and created a masterpiece ! We really like those canned onion rings for a topper on casseroles and even a bit on a salad so those had to come into play here. Once in a while I like to toss in some of those little smoked sausages or pepperoni for a little extra happiness. Just do your thing with this !
