1 pound uncooked spiral pasta
2 tablespoons butter, melted
BREAD CUBES:
1 garlic clove, minced
3 tablespoons butter
4 cups cubed French bread (1/2-inch cubes)
1/4 teaspoon seasoned salt
SAUCE:
1 small onion, finely chopped
3 tablespoons butter
1 garlic clove, minced
3 tablespoons all-purpose flour
3 cups half-and-half cream
1 package (8 ounces) process cheese (Velveeta), cubed
1/2 teaspoon sugar
1/2 teaspoon seasoned salt
1/2 teaspoon ground mustard
1/4 teaspoon hot pepper sauce
1/8 teaspoon pepper
1 cup shredded fontina cheese
1 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/4 teaspoon paprika

Steps:

  • Cook pasta according to package directions. Drain and transfer to a greased 13x9-in. baking dish; add melted butter and toss to coat., In a large skillet, saute garlic in butter until tender. Place bread cubes in a large bowl. Drizzle with butter mixture and sprinkle with seasoned salt; toss to coat., In the same skillet, saute onion in butter until tender. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the process cheese, sugar, seasoned salt, mustard, pepper sauce and pepper; stir until cheese is melted., In a small bowl, combine the fontina, cheddar and Swiss cheeses. Add 2 cups cheese mixture to sauce; stir until melted. Pour over pasta; stir to combine. Sprinkle with remaining cheese mixture. Top with bread cubes, Parmesan cheese and paprika., Bake at 350° for 30-35 minutes or until bubbly and bread is lightly browned.

It's difficult not to love Mac and cheese. It's great comfort food, and we all have wonderful memories of eating it. This one is topped with crunchy Panko breadcrumbs. From the Good Stuff cookbook

- butter for the baking dish
- 1 pound elbow macaroni
- 2 teaspoons sea salt
- 2 tablespoons extra virgin olive oil
- 1 cup cheddar cheese sauce, recipe follows
- 10 slices bacon
- 2 cups freshly grated parmesan cheese
- 1 1/2 cups panko bread crumbs
- 1/2 cup minced fresh parsley
- 1 tablespoon minced fresh thyme
- 1 tablespoon minced fresh rosemary
- 1 teaspoon minced fresh sage
- 2 tablespoons freshly ground black pepper

Steps:

  • preheat the oven to 375°. Grease a 3 quart ovenproof baking dish with butter and set aside. Bring water to a boil in a large pan over high heat. Add the macaroni and salt, reduce to medium heat, and stir to prevent sticking. Cook for seven minutes or until al dente. Drain and toss with the oil. Heat the cheese sauce in a pan over medium heat. In a skillet, cook the bacon over medium heat until crisp. Line a metal tray with paper towels. Drain the bacon. Chop the bacon into bits.
  • In a bowl, mix the bacon, Parmesan, 1 cup of the bread crumbs, parsley, thyme, rosemary, sage, and pepper. In another bowl, toss together the macaroni and heated cheese sauce, mixing well. Stir the macaroni cheese mixture into the bread crumbs mixture. Spread evenly into the prepared baking dish and sprinkle with the remaining 1/2 cup bread crumbs.
  • Place the baking dish on top of the baking pan to catch those that the cheese bubbles over. Bake for 40 minutes or until crispy and Brown on top.
  • Cheddar cheese sauce: 2 cups whole milk 1/4 cup unsalted butter, one half stick 1 cup flour 1 cup grated sharp cheddar cheese 1 1/2 teaspoons ground cayenne sea salt and freshly ground black pepper heat to melt a large pan over medium heat until you see bubbles forming on top. Meanwhile, melt the butter in another pan and stir in the flour to make a roux. Add the warm milk, whisking constantly, and continue cooking until the mixture thickens, about five minutes. Add the cheese, whisking constantly to mix. Season with the cayenne and salt and pepper to taste. Strain through a sieve to remove any lumps before serving. Makes 3 cups. Note: a roux, using classical French cuisine, is the mixture of flour and fat, usually butter or oil.

  • Cook the macaroni until very firm. The macaroni should be too firm to eat right out of the pot. Drain.  In a small bowl, beat the egg. In a large pot, melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook the mixture for 5 minutes, whisking constantly. Don’t let it burn. Pour in the milk, add the mustard, and whisk until smooth. Cook for 5 minutes until very thick. Reduce the heat to low. Take 1/4 cup of the sauce and slowly pour it into the beaten egg, whisking constantly to avoid cooking the egg. Whisk together till smooth. Pour the egg mixture into the sauce, whisking constantly. Stir until smooth. Add in the cheese and stir to melt. Add the salt, seasoned salt and pepper. Taste the sauce and add more salt and seasoned salt as needed! DO NOT UNDERSALT. Pour in the drained, cooked macaroni and stir to combine. Serve immediately (very creamy) or pour into a buttered baking dish, top with extra cheese, and bake at 350° for 20 to 25 minutes, or until bubbly and golden on top.

Put the sauce back on the stove over medium-low heat. Stir in the cheddar and Monterey Jack until melted. Add the mustard, nutmeg, thyme and sage; season with salt and pepper. Stir in the pasta, tossing well to coat in the sauce. 8. Divide the mac and cheese among the prepared acorn squash bowls. 9. Make the Topping: In a medium bowl, stir together the bread crumbs, Parmesan and butter. Sprinkle the topping over the mac and cheese. (At this point, you can wrap the squashes in plastic wrap and refrigerate them for up to two days before baking and finishing.) 10. Bake until the sauce is bubbly and has thickened slightly, 15 to 20 minutes (20 to 30 minutes if baking from the refrigerator).
