LOADED BREAKFAST FRIES – RECIPE CHAMPIONS

Number Of Ingredients 15

1 cup mayo
1/2 cup sour cream
1/4 cup chopped parsley
1 tbsp chopped chives
1 tbsp onion powder
1 tbsp chopped dill
oil for frying
4 large Yukon Gold potatoes
1 tsp salt and paprika
3 slices thick cut pork belly
1/2 cup maple syrup
1 tbsp garlic powder
1/2 tbsp smoked paprika
2 tbsp chopped chives (for garnish)
2 eggs (to fry later)

Steps:

  • Preheat oven to 375º F. Preheat oil to 350º F.
  • Cut the pork belly into 1 inch pieces. Season with a generous amount of salt and pepper. Lay them out on a baking sheet with parchment paper. Bake for about 10 minutes.
  • Extract the grease from the baking sheet. Let the pork belly cool for about 10 minutes. Add them to the frying oil and cook for another 10 minutes or until they are golden brown and crispy.
  • While the pork fries in the oil, combine the maple syrup, garlic powder and paprika in a large bowl. When the pork is done, immediately toss them in the syrup mixture and set aside.
  • Peel and cut the potatoes into 1 inch sticks. Soak in water to let the starch fall off. Pat the potatoes dry and fry for about 5 minutes. Take them out and season with salt and paprika
  • Heat a pan to medium heat. Add a tablespoon of butter. When the butter is foaming, crack the eggs into the pan keeping them separate. Let cook until the top of the egg is no longer gelatinous, and the edge of the whites are golden brown.
  • In a food processor or blender, combine the mayo, sour cream, chopped parsley, chives, onion powder and dill. Pulse a few times and then blend for about 30 seconds or until a creamy sauce consistency is achieved. Set aside for later.
  • Start with the fries in a bowl. Add some of the maple cracklings. Drizzle the ranch on top of the plate and top with fried egg. Garnish with chopped chives.

breakfast sausage, casings removed

all-purpose flour

whole milk

Steps:

  • Preheat oven to 350°. In a large ovenproof skillet, add about a third of the French fries in a single layer. Top with about a third of the cheese. Repeat twice more with remaining fries and cheese. Bake until the cheese is melty and the fries have crisped up even more, 12 to 15 minutes. Make gravy: Cook sausage in a medium skillet over medium heat until browned all over. Sprinkle flour over the sausage and cook 1 minute. Pour over milk and bring mixture to a boil. Reduce heat and simmer until very thick, about 5 minutes. Season with salt, pepper and cayenne. Remove from heat. Fry eggs: In a large skillet (preferably cast-iron) over medium heat, heat olive oil. Crack eggs into pan, spreading them apart as far as possible, then pour about 2 teaspoons of water around the eggs. Cover skillet with a large, tight-fitting lid and cook until the whites are set, 3 to 4 minutes. Arrange eggs over the cheesy French fries, then drizzle with gravy and garnish with chives. Serve warm.
