Korean Seafood Pancake (Haemul Pajeon) is a popular Korean dish packed with scallions and a delicious assortment of seafood. This easy recipe calls for simple ingredients to make the best savory pancake in less than 15 minutes. Truly a burst of umami in every bite!

1/2 cup Korean pancake mix (Buchimgaru)
1/2 cup Korean tempura mix (Twigimgaru)
1 cup water (ice cold)
100 g calamari rings (cut into bite-sized pieces)
100 g small shrimp (peeled and deveined)
salt and pepper (to taste)
1 bunch green onions or scallions (cut in thirds lengthwise and crosswise (please see image in the instructions below for reference!))
1 Korean red chili pepper (Hong-gochu) (optional)
3-4 tbsp cooking oil (add more if needed)
2 tbsp soy sauce
1 tbsp white vinegar
1 tbsp water
1 tsp minced garlic
1 tsp Gochugaru (Korean chili pepper flakes)
1 tsp sugar

Steps:

  • Prepare the dipping sauce by mixing the sauce ingredients in a small bowl.
  • Prepare the seafood by thawing in cold water if frozen. Drain excess water and season with salt and pepper. Cut scallions length and crosswise (see image for reference) and slice the red chili pepper if using.
  • In a medium bowl, add equal parts of Korean pancake mix and tempura mix. Add in ice-cold water and mix well. The batter should be thin and runny. Add in the prepared seafood and mix until just combined.
  • Heat 3-4 tablespoons of oil in a non-stick pan over medium-high heat. Ladle 1/2 of the mixture onto the pan and spread it evenly using the ladle. Arrange half of the sliced red chili pepper on top (optional).
  • Use a large spatula to lift the edge of the pancake, and flip promptly when the bottom is golden brown. Add a bit more oil around the edges if preferred, and cook until golden brown, about 3-4 minutes. Repeat the process for the second pancake.
  • Cut into bite-sized pieces and serve warm with the dipping sauce!

1/4 cup soy sauce
1/2 tablespoon unseasoned rice vinegar
1/2 teaspoon sugar
1/2 cup Korean pancake mix (buchimgaru)
1/2 cup Korean frying mix (twigim garu)
1 1/2 teaspoons kosher salt
1/2 cup water
1 large egg, beaten
1/2 bunch scallions, thinly sliced
1/4 cup shucked small oysters with juices
1/4 cup shucked clams with juices
1/4 cup peeled and deveined raw medium shrimp, cut into 1/2-inch pieces
1/4 cup cleaned 1/4-inch-thick squid rings
4 teaspoons sesame oil

Steps:

  • Make the dipping sauce: In a small bowl, stir together soy sauce, vinegar, and sugar.
  • Make the pancake: In a large bowl, whisk together pancake mix, frying mix, and salt. Whisk in 1/2 cup water and egg. Fold in scallions, oysters, clams, shrimp, and squid.
  • Heat sesame oil in a 10-inch skillet over moderately high heat. Quickly add batter to pan and spread to edges with a rubber spatula while shaking pan. Cook until bottom is browned, about 5 minutes, shaking pan occasionally to keep it from sticking. Flip and cook until batter is set and bottom is browned, 4 to 5 minutes. Transfer to a serving plate.
  • Using scissors, cut pancake into 4 or 8 wedges and serve with the dipping sauce.

  • To Prep Mix the pancake flour with ice water and whisk until smooth. Add remaining ingredients (Seafood and Spring Onion Pancake) and mix well to coat. To Cook Heat 1 tbsp of vegetable oil in a non-stick pan on medium/high heat. Pour sufficient of the pancake mixture to make pancake of approximately 15cm. Cook for 2 to 3 mins until the top starts to set. Reduce to medium/low heat, cook for 2 mins. Turn the pancake over and cook of another 2 mins or until pancake is golden brown underneath. Mix dipping sauce ingredients together. Repeat step 3 with the remaining mixture. Serve hot with the dipping sauce. To serve as a main meal, make 2 Pajeon pancakes instead of 4. Mushrooms and kimchi may be used to replace seafood mix for a vegetarian option.

  • 1.Mix all ingredients (minus the dipping sauce) together in a mixing bowl until a thick batter mixture is created. It should be similar thickness as regular pancakes. 2.Heat a non-stick frying pan over medium-high heat and add a generous amount of olive oil. Pour half of the batter evenly over the pan.
