One of the most protected, discussed, and sought-after secret recipes in the food world is KFC's Original Recipe Fried Chicken. Long ago I published my first hack of the famous formula, but the recipe, which was based on research from "Big Secrets" author William Poundstone, includes only salt, pepper, MSG, and flour in the breading, and not the blend of eleven herbs and spices we have all heard about. The fried chicken made with my first recipe is good in a pinch, but it really needs several more ingredients to be a true clone. That is why, over twenty years later, I was happy to get another crack at the secret when we shot the pilot episode for my CMT TV series Top Secret Recipe. In the show, I visited KFC headquarters, talked to friends of Harlan Sanders who had seen the actual recipe, and even checked out the Corbin, Kentucky, kitchen where Harland Sanders first developed his chicken recipe. During that four-day shoot I was able to gather enough clues about the secret eleven herbs and spices to craft this new recipe—one that I believe is the closest match to the Colonel's secret fried chicken that anyone has ever revealed. Oven Fried Chicken has all of the crispy, juicy flavors of a classic fried chicken recipe but without the added fat from frying. This Oven Fried Chicken is tender, juicy, flavorful, and always a family favorite!

4 lbs Chicken (pieces (cut up fryer) [See Note 1])
non-fat cooking spray (like Pam [See Note 4])
2 Eggs
1/2 cup Buttermilk (helps the flour dredge stick to the chicken)
1 cup All-purpose flour
1 cup Bread crumbs (Plain or Italian seasoned)
1-1/2 tsp Baking Powder ([See Note 2])
2 tsp Salt
1 tsp Ground black pepper
1/2 tsp White pepper
1/2 tsp Paprika (regular or spicy)
1 tsp Poultry seasoning ([See Note 3])
1/2 tsp Celery salt
1/2 tsp Onion powder
1/2 tsp Garlic powder

Steps:

  • Preheat oven to 375 degrees F.
  • Create the Dredge Station: In a shallow bowl, beat the eggs and then whisk in the buttermilk.In a separate bowl or shallow dish, combine all the dry ingredients to make the coating mix.
  • Prepare the Chicken: Trim the chicken and remove any excess fat. Dip each piece of chicken into the buttermilk mixture and then toss to coat in the breading mixture until very well coated. Set aside and allow the chicken to rest for a minute or 2 in the breading mix for the coating to set up. Vigorously shake off any excess breading mix and arrange it onto a roasting rack fitted inside a rimmed baking sheet. Excess flour will not brown without a generous coating of cooking spray oilAfter all the chicken is coated, spray each piece generously with aerosol oil or non-fat cooking spray. This helps the coating brown evenly and crisp up in the oven. (Even a generous coat of aerosol oil is still much less oil than deep-frying). Bake for about 45 minutes or until the chicken is well browned, the internal temperature is 165 degrees F and the juices run clear.

  • Pour enough oil into a large heavy pot to come halfway up the sides. Clip a deep-fry thermometer to the pot. Heat the oil over high heat until the thermometer registers 300 degrees F. Working in 3 batches, fry the chicken, turning often and adjusting the heat to maintain the temperature, until deep golden brown, about 8 minutes for the wings, 10 minutes for the legs and 12 minutes for the thighs and halved breasts (an uncut breast will take 15 to 18 minutes). Transfer to a clean wire rack set over paper towels to drain.
