Use sausages as the base for this easy summer traybake. It's packed with artichokes, new potatoes, butter beans, tomatoes and fresh pesto, and is delicious with crusty bread

1 red onion , cut into wedges
4 new potatoes , thinly sliced
6 canned or jarred artichokes , halved
100g cherry tomatoes
4 spring onions , halved lengthways
2 pork sausages , cut into chunks
1 tsp fennel seeds
1 small lemon , cut into wedges
½ tbsp olive oil
400g can flageolet or butter beans , drained and rinsed
150ml low-salt vegetable stock
2 tbsp fresh pesto
crusty bread , to serve (optional)

Steps:

  • Heat the oven to 200C/180C fan/gas 4. Toss the red onion, potatoes, artichokes, tomatoes, spring onions, sausages, fennel seeds and lemon wedges together in a baking tray or 20 x 20cm baking dish. Drizzle over the oil and season to taste (you won’t need a lot of salt, as the sausages can be quite salty).
  • Roast for 20 mins, then add the beans and stock. Roast for 35 mins more, then remove from the oven, swirl through the pesto and serve with crusty bread, if you like.

Baked Tortellini with Pesto Sauce image

Baked tortellini in a creamy pesto sauce will wow your family and guests alike! Bake until browned and bubbly, then top with fresh basil.

4 tablespoons unsalted butter
1/4 cup all-purpose flour
1/2 teaspoon sea salt
1 teaspoon coarse black pepper
3 cups whole milk
1 1/2 cups grated parmesan cheese
2 cups grated mozzarella cheese
3/4 cup pesto
16 ounce package fresh tortellini
2 cups halved grape tomatoes
Fresh basil, chiffonaded (for garnish)

Steps:

  • Preheat the oven to 350°F.
  • In a deep skillet, melt 4 tablespoons of butter. Add flour, salt, and pepper to the butter and saute 2-3 minutes until the flour begins to brown.
  • While whisking constantly, gradually add the milk. The mixture will whisk into a thick paste and eventually a sauce as the milk is added. Once the milk is fully incorporated, continue cooking until mixture comes to a simmer and thickens.
  • Stir in 1 cup of mozzarella cheese and 1 cup of parmesan cheese, adding a handful at a time and stirring each addition until melted and smooth.
  • Whisk in pesto sauce and adjust to your preferred taste.
  • Meanwhile, in a large pot of salted water, cook the tortellini for 2 minutes less time than the package instructions (mine cooked for 5 minutes). You want the tortellini al dente as it will continue cooking in the oven.
  • In a large casserole dish (3 Qt.), layer half of the cooked and drained tortellini, Spoon half of the prepared pesto sauce over the tortellini. Sprinkle with 1 cup of halved cherry tomatoes and half of the remaining cheeses.
  • Add a second layer of tortellini, sauce, tomatoes and cheese.
  • Bake for 20-30 minutes, or until the cheese on top of the dish is melted, bubbly, and beginning to brown.
  • Garnish with fresh cracked pepper and fresh basil, if desired.
  • We used whole milk for a creamy, rich sauce. 2% can be substituted. The overall amount of cheese can also be reduced for a lighter casserole.
  • This baked tortellini is creamy, rich, cheesy, and delicious with lots of added flavor from the pesto. Use your favorite pesto sauce (we like Trader Joe’s and Costco brand) or my homemade version
  • Fresh tortellini comes in a variety of flavors - we used a basic cheese stuffed tortellini, but a chicken, sun-dried tomato, or spinach tortellini would also be delicious in this recipe.
  • For a sharper cheese flavor, you can use jack cheese instead of mozzarella or a combo of jack and mozzarella. The mozzarella adds a lot of creaminess and gooey cheese. Romano can be interchanged with the parmesan.

    1. Turn on the oven to 200ºC/gas 6. Carefully cut the pastry block in half with a table knife. Wrap the other half and refrigerate or freeze for later.
    2. Dust some flour onto a clean work surface and, using a rolling pin, roll out the pastry into a square, measuring 26cm x 26cm. Cut into 4 equal squares.
    3. Place the pastry squares on a baking tray, leaving a space between each.
    4. Using the back of a spoon, spread the centre of each square with pesto, but don’t spread it onto the edges.
    5. Squash the tomatoes into a large mixing bowl, then snap the asparagus spears into 3cm pieces. Keep the lovely pointy tips and a little of the stalk, but discard the end 3cm.
    6. Using a speed peeler, carefully shred the courgettes into ribbons. Tear the roasted peppers into strips and add to the bowl.
    7. Pick the basil leaves, reserving the pretty ones for later. Place the large ones in the mixing bowl.
    8. Mix the vegetables together in the bowl, adding a splash of oil. Pile a little of the mixture on each pesto-smeared tart and top with two olives (if using).
    9. Break up the mozzarella and place little bits on top of each tart – this will make it gooey like a pizza. Grate over some Parmesan (if using).
    10. Bake for 15 to 20 minutes, until the pastry is golden and the cheese is all bubbly.
    11. Once the tarts are ready, allow to cool slightly. Sprinkle with the reserved basil leaves and serve with a nice salad for lunch.
