ADDITIONAL INGREDIENTS:
1 can (8-1/4 ounces) cream-style corn
1/2 cup chopped onion
1 egg
Oil for deep-fat frying

Steps:

In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (4-1/2 cups total)., To prepare hush puppies: In a large bowl, combine 1-1/2 cups mix, corn, onion and egg; stir just until moistened. In an electric skillet or deep-fat fryer, heat 1-1/2 in. of oil to 375°. Drop batter by teaspoonfuls into oil; fry until golden brown. Drain on paper towels. Serve warm.

1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.
