24 to 36 littleneck clams
1 bottle beer

Steps:

  • Heat gas grill. Wash clams one at a time, scrubbing lightly to remove sand from outside.
  • Set grill-proof pan (camping pan or cast iron pan) on grill rack. Pour beer into pan.
  • Place clams on grill over medium heat. Cover grill; steam clams 5 minutes. Check and remove any clams that are wide open. Cover grill; continue steaming 5 minutes longer or until all clams have opened wide. Serve immediately.

I recently went to the Pacific Northwest and did some clam digging with friends. It was something I hadn't done for many years. But it is something that I wish I could do more often. We dug clams for a few hours, then cleaned them and ate them right then and there. They were the best tasting clams that I have ever had. Unfortunately the clams that I am cooking on the grill here were dredge harvested in the Atlantic. Which is just depressing. These clams were depressing. They tasted okay. But you could tell they had been sitting around for a few days. Plus I mean nothing really compares to digging your own. I may have set the bar a little high for this one.

Once the clams are cool enough to handle, remove clam meat from the shell and chop. Take the butter and shallot mixture off the heat, then add the chopped clams, 2 cups of breadcrumbs, 1 cup of parmesan, tarragon and basil and season with salt and pepper to taste. 5. Spoon the mixture evenly back into the clam shells, top with ¼ cup of breadcrumbs and ¼ cup of parmesan, and return to the grill for 5 minutes. Remove and serve immediately.
