1 quart water
1 cup dried red beans, rinsed
1/2 tablespoon salt
8 parsley sprigs
3 scallions or 3 green onions, chopped
2 garlic cloves
1/4 teaspoon dried rosemary
2 tablespoons olive oil
1 cup rice

Steps:

  • Bring water to boiling. Add red beans and cook covered for 1 1/2 hours.
  • Drain beans, reserving liquid, and set aside. Add enough water to bean liquid to equal 2 1/2 cups of liquid. Set aside.
  • In a mortar, pound together to form a paste the salt, parsley, scallions, garlic, and rosemary.
  • Heat oil and seasoning paste in a Dutch oven over medium heat. Put rice in Dutch oven and stir until well coated with oil. Add reserved liquid and bring to a boil, stirring. Add beans and again bring to a boil. Reduce heat, cover, and cook undisturbed for 20 minutes.
  • Remove cover, stir, and cook about 5 minutes longer, or until no liquid remains.

2 cup(s) long grain rice, uncooked
1/2 cup(s) dried kidney beans
3 cup(s) water the kidney beans cooked in
1/4 pound(s) salt pork or bacon
2 - chicken bouillon cubes
1/2 teaspoon(s) kosher salt or to taste
6-8 - whole cloves
1/4 teaspoon(s) freshly ground black pepper
1/2 cup(s) onion, finely diced
1/4 cup(s) canola oil
1 - whole habanero or scotch bonnet pepper (optional)
3 clove(s) garlic, peeled and crushed
1 tablespoon(s) butter, unsalted

Steps:

  • Bring dried beans to boil in 8 cups of water. Cook until tender, but shape remains. Do not over cook.
  • Strain beans and put bean water aside. Saute` salt pork or bacon, spices, and beans in oil, until beans are crispy. Add salt, cloves, and black pepper. Add 3 cups of bean water and heat to boiling. Add rice, bouillion cubes, and hot pepper to boiling liquid.
  • Once water has evaporated, remove whole pepper and mix in 1 tablespoon of butter. Cover pot tightly and continue cooking on low heat ( approx. 20 minutes) until done.

  • Heat oil in a large skillet over medium heat. Saute shallot and garlic until fragrant. Stir in cooked beans, and cook for 2 minutes. Measure reserved liquid, and add water to equal 5 cups; stir into skillet. Stir in the uncooked rice. Season with bay leaves, adobo seasoning, salt, pepper, and cloves. Place sprigs of parsley and thyme, and scotch bonnet pepper on top, and bring to a boil. Reduce heat, cover, and simmer for 18 to 20 minutes. Remove thyme, parsley, and scotch bonnet pepper to serve.

  • Heat oil in a heavy bottom pan. Add garlic, chives, parsley, onion, cloves and thyme and fry for 2 – 3 minutes stirring. Add tomato paste if using before adding water (let tomato paste cook with spices). Add water and bring to boil. In the meantime, rinse millet under cold running water. When water starts to boil, add millet, stir, and season with salt and pepper and let cook over medium heat. When water has almost evaporated, add cooked beans with its broth gently stir and continue to cook. Check seasoning and add additional salt and pepper. When all the water evaporates, lower heat, cover and cook for 45 minutes to one hour, gently stirring millet mixture occasionally. Let millet cook completely before serving. Serve with seafood, poultry or meat of your choice.
