Easy gluten-free banana cake. Made with gluten-free flour, brown sugar, and melted butter, the cake is moist and tender. (Dairy-free option included.)

3 cups gluten-free flour (Bob's Red Mill 1:1 Gluten-Free Baking Flour, suggested) ((14 ounces / 420 grams))
2 ½ teaspoons baking powder
½ teaspoon salt
3 large very ripe bananas (( about 15 ounces/ 425 grams))
1 cup granulated sugar ((7 ½ ounces / 212 grams))
¾ cup butter, melted (see note for dairy-free option) ((6 ounces / 170 grams))
½ cup packed brown sugar ((3 ½ ounces/ 100 grams))
3 large eggs ((about 6 ounces / 170 grams out of shell))
? cup milk, regular or dairy-free ((5 1/2 ounces / 155 grams))
2 teaspoons vanilla extract
8 ounces cream cheese, softened ((226 grams))
1/2 cup butter, softened ((4 ounces / 113 grams))
4 cups powdered sugar ((16 ounces / 453 grams))
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease a 9x13-inch cake pan with nonstick cooking spray.
  • Whisk together gluten-free flour, baking powder, and salt in a small bowl. Set aside.
  • Mash bananas in a large bowl until almost smooth. Use an electric mixer or fork to do this. Add the granulated and brown sugars. Mix until combined. Add the melted butter and eggs and mix until smooth. Mixture will be thin. Stop the mixer and add the dry ingredients. Mix until a batter forms. Add the milk and mix until just combined
  • Spread batter into the prepared pan. Bake until golden brown, about 30 minutes.
  • Cool cake in the pan. Once cake is cool frost with cream cheese frosting (recipe included) or chocolate or vanilla buttercream.
  • Store cake wrapped on the counter for up to three days. Freeze cooled and frosted cake for up to three months.

This recipe is from Bette Hagman's dessert cookbook. It is so delicious! Until tonight when I made this recipe I had never tried banana cake before and I wasn't really sure what to expect. But I was happily surprised that it was a very light, not too sweet,very yummy refreshing cake.

1/3 cup white bean flour
1/4 cup sorghum flour
2/3 cup tapioca flour
2/3 cup cornstarch
1 teaspoon xanthan gum
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons egg substitute
1/2 teaspoon salt
1/3 cup buttermilk
1 cup mashed banana
1 tablespoon lemon juice
1/2 cup margarine
1 1/3 cups white sugar
3 eggs
1 1/2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.Grease a 9x13 oblong cake pan and dust lightly with rice flour.
  • In a medium bowl, whisk together the bean flour,sorghum flour, tapioca flour, cornstarch, xanthan gum, baking powder, baking soda, egg replacer, and salt. Set aside.
  • In a smaller bowl, stir together the buttermilk , mashed bananas, and lemon juice.
  • In the bowl of the mixer, cream the margarine and sugar until creamy. Add the eggs, one at a time, beating until smooth, and fluffy. Add the flavouring. Add half the the dry ingredients and half the banana mixture. Beat until just smooth. Repeat with the second half. Beat about 1 minute (don't overbeat).
  • Spoon into the prepared pan.Bake for approximately 35-40 minutes, or until a tester comes out clean and the edges of the cake seperate slightly from the pan.
  • Cool before serving. You may cut the cake into squares and top with whipped cream ( with a couple of fresh banana slices for decoration) or frost with your favourite icing.

  • Preheat oven to 180°C (160°C fan) mark 4. Grease and line the base and sides of a 900g (2lb) loaf tin with baking parchment.

    Beat butter and muscovado sugar in a large bowl with a handheld electric whisk until pale and creamy. Gradually whisk in eggs, then apple sauce. Stir through bananas.

    Sift over spice, flour, baking powder and a pinch of salt. Fold together with a large metal spoon (mixture may look a little curdled); empty into tin. Bake for 50min-1hr, or until risen and a skewer inserted into centre comes out clean. Leave to cool in tin for 10min, then take out and cool completely on a wire rack.
