very ripe bananas, preferably frozen and thawed, mashed

large eggs, room temperature

1/4 c.

buttermilk

1/4 c.

molasses

1 tsp.

pure vanilla extract

1 c.

California walnut pieces, plus ½ c. California walnuts roughly chopped

1 1/2 c.

powdered sugar

3 tbsp.

whole milk

Steps:

  • Preheat oven to 375º and brush a standard 9”-x-5” loaf pan with butter. In a medium bowl, whisk together flour, brown sugar, ginger, cinnamon, baking powder, salt, baking soda, cloves, and nutmeg until well combined.  In another large bowl, whisk together butter, bananas, eggs, buttermilk, molasses, and vanilla until smooth.  Add dry ingredients and walnuts to the wet ingredients and stir until just combined. Scrape into prepared pan and spread into an even layer. Bake until a toothpick inserted in the center of the bread comes out clean, about 1 hour. Let cool in pan 10 minutes, then transfer loaf to a wire rack and let cool completely.  In a medium bowl, whisk the powdered sugar and 2 tablespoons of the milk until combined. Add milk, ½ teaspoon at a time if too thick. Spread glaze over top of loaf and sprinkle with remaining walnuts. Let set at least 30 minutes before slicing and serving.

2 cups packed brown sugar
1 cup mashed bananas
2 eggs
1 teaspoon vanilla extract
2 tablespoons vegetable oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1?½ teaspoons ground cinnamon
½ teaspoon ground allspice
1 tablespoon ground cardamom
½ teaspoon ground cloves
2 cups dark beer
1?½ cups chopped walnuts
2 tablespoons all-purpose flour
2 cups dates, pitted and chopped
2 tablespoons minced fresh ginger root

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5-inch loaf pans.
  • In a large bowl, mix the brown sugar, banana, eggs, and vanilla. For moister bread, add oil, if desired.
  • In a separate bowl, sift together 3 cups flour, baking soda, salt, cinnamon, all spice, cardamom, and cloves. Alternately blend the flour mixture and beer into the banana mixture.
  • Toss the walnuts with the remaining flour. Stir in the dates and ginger to the mixture and blend well. Pour into two loaf pans.
  • Bake in preheated oven until inserted toothpick inserted into the center of each loaf comes out clean, about 1 hour.
