Funnel Cakes - An Affair from the Heart image

Vegetable Oil, for frying
2 ? cup all-purpose flour
¼ cup granulate sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
2 large eggs, lightly beaten
2 cups milk
2 Tablespoons maple syrup
¼ teaspoon vanilla extract

Steps:

  • Heat about 1-1 ½ inches of vegetable oil in a skillet to 375 degrees F. Line a wire rack with paper towels.
  • Combine flour, sugar, baking powder, baking soda, and cinnamon in a bowl.
  • Whisk together eggs, milk, syrup, and vanilla; add this mixture to the flour mixture and whisk until smooth.
  • Cover the bottom of a funnel spout with your finger and add 1 cup batter into the funnel.
  • Hold the funnel several inches above the hot oil and release your finger from the funnel hole, moving the funnel in a circular or criss-cross motion until all the batter is released.  Scrape any leftover batter with a rubber spatula, if need be.
  • Fry for about 2 minutes or funnel cakes are golden brown. Transfer to the paper towel-lined rack.
  • Serve warm sprinkled with powdered sugar.
  • Optional toppings: apple pie filling, cherry pie filling, whipped cream, ice cream, cinnamon and sugar, fresh berries.

8 cups vegetable oil for frying
1?½ cups milk

2 cups all-purpose flour

¾ cup confectioners' sugar

Steps:

  • In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
  • In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
  • While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.
