Basic Chinese Congee Recipe - Todd Porter and Diane Cu ... image

Number Of Ingredients 6

1 cup raw long-grain white rice, rinsed
7 cups chicken or vegetable stock
1/2 teaspoon kosher or sea salt, plus more for seasoning
One-inch knob of ginger, peeled and sliced thin
Sliced green onion, for garnish
Sesame seed oil or soy sauce (optional)

Steps:

  • In large pot add stock, rice, salt and ginger. Bring the mixture to a boil, then reduce the heat to a low simmer. Stir occasionally so that the rice doesn't clump or stick at the bottom.
  • Simmer the congee for about 1 hour or until the congee is thickened and creamy. Add salt to taste. Serve the congee hot.

Number Of Ingredients 14

1 cup jasmine or arborio rice
2 cups stock (of choice)
2 cups of water
1 cup cabbage, chopped
2 kaffir lime leaves
2 tablespoons ginger, mine is usually thickly chopped
2 things of bok choy
any other types of greens or root vegetable that floats your boat
3 green onion chopped
1 tablespoon roasted sesame oil
white pepper, much as you want
salt, much as you want
½ onion julienned
1 count

Steps:

  • Boil one cup of rice in three cups of water. In a separate pot, heat up the stock and water. Once it is briskly boiling, add the cabbage, ginger, lemongrass, kaffir lime leaves, salt, pepper and sesame oil. Stir and smell. Add the already boiled rice. Turn the heat to medium low and cook cook cook until the rice break down and it looks like a porridge rather rice floating around in water. Adjust the consistency according to preference by either reducing further or adding water. In a skillet, put one count of oil on high heat. When it seems sufficiently heated, throw in the onions. Fry for a minute. Add the mushrooms and white pepper. Stir for two minutes and turn the stove off

  • To Cook Place chicken drumsticks and a teaspoon of salt in six cups of boiling water and bring back to boil. Lower heat and simmer for 20 minutes with the lid on. Remove chicken and set aside to cool down. Add cooked rice to the broth and boil until rice thickens into porridge, stirring the whole time. Chop up the white section of the spring onion and thinly slice up the green part. Saute the chopped onion and the white spring onion with oil until fragrant. Add julienned ginger and continue to saute until onion is caramelised. Turn off heat. Remove meat from chicken drumsticks and coarsely chop up chicken. Return chicken pieces to rice congee. Add extra water to congee if it becomes too thick. Taste test. Add remaining salt as necessary. Add pepper, stir through and remove from heat. Serve congee garnished with caramelised onion, ginger and sliced onion.
