This twist on a classic rum ball recipe substitutes chocolate cookies for the usual vanilla wafers, and features bourbon rather than rum. The flavors will mellow and integrate after sitting for a few days, so the cookies will be all the better if you can plan ahead and let them ripen for three or four days. They’ll keep for up to two weeks stored at room temperature.

Number Of Ingredients 6

2 1/2 cups/280 grams chocolate cookie crumbs (such as Nabisco Famous Chocolate Wafers or chocolate graham crackers)
1 1/4 cups/125 grams pecans, whole, halved or pieces
1/2 cup/120 milliliters good bourbon
1 cup/120 grams confectioners’ sugar, plus more for rolling
3 tablespoons unsweetened cocoa powder
1 tablespoon honey

Steps:

  • In the bowl of a food processor, pulse together the cookie crumbs and pecans until the nuts are finely ground. (The crumbs keep the nuts from turning into nut butter.)
  • In a separate bowl, stir together the bourbon, 1 cup confectioners’ sugar, cocoa powder and honey. Add the mixture to food processor and pulse until just combined. Let the dough rest overnight, uncovered and at room temperature. This allows the mixture to dry out a little.
  • Roll the dough into balls about 1 inch in diameter, then toss the balls in confectioners’ sugar. Store them in an airtight container if you want them moist, or uncovered if you like them to develop a crunchy sugar crust on the outside. Sprinkle with more confectioners’ sugar just before serving.

Bourbon balls are an ideal holiday dessert. They make adorable arrangements and are easy for guests to pick up at parties, and they make the cutest (and most delicious) little gifts for hostesses, neighbors, or anyone who deserves a sweet treat. This no-bake recipe only has four ingredients, so it's budget-friendly and easy. With only 30 minutes of hands-on time, you'll spend less time making these Fudgy Pecan Bourbon Balls than you would picking out a present for someone at the store! If you want to make a few batches and save them to gift, they freeze well and can be kept in the refrigerator for up to a week. These decadent little delights are a cross between bourbon balls and chocolate truffles. For gifting, nestle each one in a mini baking cup, and place them in cardboard jewelry boxes wrapped in holiday paper before delivering.

8 ounces 60% cacao dark chocolate, cut into 1/2-inch pieces
1/2 cup heavy cream
1/4 cup (2 oz.) bourbon
3/4 cup pecan halves, finely chopped

Steps:

  • Place chocolate in a medium bowl. Bring heavy cream and bourbon just to a simmer in a saucepan over medium. Remove from heat, and pour cream mixture over chocolate. Let stand 1 minute; stir vigorously until cream and chocolate are thoroughly blended. Let mixture cool 15 minutes. Cover with plastic wrap, and chill until firm, about 2 hours. (If you cannot make the truffles immediately, the mixture will keep, covered, in the fridge up to 1 week.)
  • Place chopped pecans on a shallow plate. Line a baking sheet with parchment paper.
  • Working quickly and using a small warmed teaspoon (dipped into hot water and then dried), scoop chilled chocolate mixture by 2-teaspoon portions, and shape each into a ball. Place each ball on chopped pecans. Once the plate is filled, wash hands and roll balls in pecans to completely cover. Transfer balls to a parchment paper-lined baking sheet. Repeat with remaining chocolate mixture and pecans.
  • Chill balls until firm, about 1 hour. (Or freeze until firm, about 10 minutes.) Enjoy them now, gift them, or store in an airtight container in the refrigerator up to 1 week.

The bourbon ball was created in 1938 by Ruth Hanly Booe, a former Kentucky school teacher turned candy maker. The creamy original was whisky-spiked, covered with chocolate and topped with a pecan. Modern-day versions, like this one, are simpler to put together: Vanilla wafers, toasted pecans, cocoa powder, confectioners' sugar and bourbon are combined in a food processor, rolled into balls and dunked in melted chocolate or rolled in confectioners' sugar. Ours also includes a bit of maple syrup for added depth. Bar chocolate, as opposed to chocolate chips, works much better for enrobing candies because chocolate chips have less cocoa butter and become too thick to coat evenly when melted.
