1 (2 lb) package frozen hash brown potatoes
1 (10 3/4 ounce) can cream of mushroom soup (undiluted)
1 cup diced ham
1/8 teaspoon dried thyme
3 cups packed grated sharp cheddar cheese
1 cup sour cream
1 cup finely chopped onion
1 (6 ounce) can French-fried onions or 1 (6 ounce) can crumbled potato chips

Steps:

Pre-heat oven to 350°F.
In a bowl, add all ingredients and mix until well combined.
Pour into a 13x9 casserole dish.
Bake for 1 hour or until top is slightly golden.
Sprinkle top with french fried onions (or crumbled potato chips) and bake an additional 10 minutes or until golden brown.

1/3 cup condensed cream of chicken soup, undiluted
2-1/2 cups frozen shredded hash brown potatoes
1 cup shredded cheddar cheese, divided
2 tablespoons chopped onion
1 tablespoon butter, melted
1/8 teaspoon salt
Dash pepper

Steps:

In a large bowl, combine sour cream and soup. Stir in the potatoes, 1/2 cup cheese, onion, butter, salt and pepper. Pour into a 1-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until bubbly and heated through.

In a large microwave-safe bowl, combine the soup and cream cheese. Cover and cook on high for 3-4 minutes or until cream cheese is melted, stirring occasionally. Add the potatoes and stir until coated., Spoon into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until the potatoes are tender. Sprinkle with cheddar cheese. Bake 3-5 minutes longer or until cheese is melted.
Freeze option: Sprinkle cheddar cheese over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.
