- Butter bread slices on both sides. Using a small glass or cookie cutter, cut a 2-inch hole in the middle of each slice of bread.
- Preheat griddle over medium heat. Place buttered bread on griddle and cook until golden brown. Turn and drop a dab of butter into the center of the bread, Crack the egg into a small bowl, gently pour the egg into the hole. Repeat the process with the remaining slices of bread. Season with salt and pepper. Finish cooking the eggs to your preferred taste (sunny side up, over easy, over medium, etc. ). The bread "centers" can be grilled also.

- Heat a large nonstick skillet over medium heat. Add oil to pan; swirl to coat. Crack eggs into pan; cook 2 minutes. Cover and cook 2 minutes or until desired degree of doneness.
- Spread one-fourth of mashed avocado evenly over each toast slice. Arrange 1/4 cup sprouts over mashed avocado on each toast slice. Top each toast slice with 1 fried egg. Sprinkle eggs evenly with salt and black pepper. Top each assembled avocado toast with 2 tablespoons fresh salsa.
