1?½ cups corn kernels
2 roma (plum) tomatoes, diced small
2 tablespoons minced jalapeno pepper
1 tablespoon minced fresh cilantro
1 tablespoon orange juice
1 tablespoon lime juice
1 tablespoon olive oil
½ teaspoon salt

Steps:

  • Mix corn, tomatoes, jalapeno pepper, cilantro, orange juice, lime juice, olive oil, and salt together in a bowl. Cover with plastic wrap and refrigerate for at least 2 hours.

1 medium tomato, seeded and diced
1 jalapeño, finely chopped (include seeds for more heat)
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 garlic clove, minced
1/2 teaspoon salt

Steps:

  • Combine all ingredients in a medium bowl, and mix together. Cover and let stand about 15 minutes to allow flavors to develop.
