This came out of a cookbook I bought for my daughter… but I have to admit that I really like it too! It’s a great recipe for your kids to help you make, and they think it’s so cool to cook with Cheez-it’s!

Number Of Ingredients 5

3 cups Cheez-It crackers (or similar, small cheddar flavored crackers)
2 eggs
1/4 cup water
nonstick cooking spray (such as Pam)
1 lb chicken tenders (or boneless skinless breasts, cut into strips)

Steps:

  • Preheat oven to 350°F.
  • Line a cookie sheet with aluminum foil (or silpat if you have it).
  • Place the Cheez-it’s in a zip-lock baggie and give it to your kid to play catch, touch football, whatever. Smack the back a few times with a rolling pin… get the cheese-it’s crushed, but don’t worry if there are some larger pieces. Pour into a shallow bowl or plate.
  • Crack the eggs into a bowl and add the water. Whisk together until combined well. (something else your child can do!).
  • Dip the chicken in the egg mixture, then roll around in the crushed Cheez-it’s (kids love this part!)
  • Place on the cookie sheet, continue until all the chicken is coated.
  • Lightly spray all coated chicken with the cooking spray.
  • Bake at 350°F about 15 -20 minutes (start checking the smaller ones after 10 minutes. I always pull them out as they get cooked through so that the smallest isn’t incinerated by the time the largest piece is done cooking).

1 (1-oz.) package ranch dressing mix
1 tablespoon dried dill
1 tablespoon garlic powder
2 (16-oz.) packages bite-size Cheddar cheese crackers (such as Cheez-Its)

Steps:

  • Preheat oven to 300°F. Whisk together ? cup olive oil, 1 (1-oz.) package ranch dressing mix, 1 Tbsp. dried dill, and 1 Tbsp. garlic powder in a small bowl. Drizzle over 2 (16-oz.) packages bite-size Cheddar cheese crackers (such as Cheez-Its) in a large bowl. Toss to coat. Divide between 2 large rimmed baking sheets, and spread in an even layer. Bake 30 minutes or until lightly toasted, stirring every 10 minutes. Cool on pans for 30 minutes. Store in large ziplock plastic bags or in airtight containers.

  • Preheat oven to 375°F. Line two baking trays with parchment paper and set aside. In the bowl of a standing mixer fitted with the paddle attachment, place the cheese, butter, salt, and flour. Stir to combine until the mixture is crumbly. Add 2 tablespoons of water and mix until a dough forms (this may take a minute or so). If needed, add an additional tablespoon of water. Divide the dough in half and roll into logs. Wrap the logs of dough in plastic wrap and chill in the refrigerator for one hour. Roll each log of dough out on a lightly floured surface to 1/8-inch thickness. (The crackers will puff up in the oven.) Use a dough scraper or a straight-edge ruler and a pastry wheel to cut the crackers into one-inch squares. Spread on the baking trays with space between the crackers.
