At my house, we don't like those fried mushrooms that are black and slimy where the breading slides easily off. This recipe is just a very crisp breading on a fresh mushroom. They'll 'pop' when you cut into them they are so fresh. Panko breadcrumbs are a polished bread crumb that you can find in an Asian market or the International section of your favorite food store and they make just a wonderful crunchier coating, too.

Steps:
- Mix flour, cornstarch, baking powder and salt in a bowl.
- Add water to make a batter.
- Dip clean mushroom into batter letting excess batter drip off.
- I find it easier to stick a toothpick into the mushroom to dip it.
- After dipping into batter roll in Panko breadcrumbs to coat.
- Deep fry in oil until golden.
- We like to serve with cocktail sauce.

EASY DEEP-FRIED MUSHROOM CAPS RECIPE - FOOD.COM
You can use any amounts of flour, bread crumbs and seasonings, depending on how many mushroom caps you are making. You can use whatever seasoning you prefer, garlic salt is good to use in place of the seasoning salt and garlic powder. Prepare as many mushrooms as you like. Make certain to use only FINE DRY bread crumbs, if you cannot find any fine bread crumbs, process the crumbs on the food processor until fine, soft bread crumbs will not hold on the caps.

Steps:
- Dip the mushroom caps in flour, then in beaten egg.
- Roll in fine bread crumbs.
- Place on a plate and lightly season with salt and garlic powder.
- Heat oil in a large frypan and deep-fry the coated mushroom caps in hot oil for about 1 minute, or golden brown on the outside.
- Delicious!
