Cherry Jubilee Cheesecake Bars - Just A Pinch Recipes image

My, what a refreshing spring cake! The cherry flavor is just right and doesn't overwhelm the dessert. Highly recommended!

Number Of Ingredients 5

3 - eggs
1 package(s) cherry chip cake mix
1/2 cup(s) butter, room temperature
2 large 8 oz. packages of cream cheese
1 - tub cherry frosting(already made)

Steps:

  • Heat oven to 350. Beat cake mix and butter until crumbly. Reserve 1 cup.
  • Press into 9x13" pan. Beat cream cheese, eggs, and frosting mix together.
  • Pour over crust. Top with reserved crumbs. Bake 45 minutes. Cook and refrigerate at least 2 hours or more.
  • Cut into 4x6 rows. They are so rich you won't need to cut any larger. Yummy!

Number Of Ingredients 6

One 12-ounce bag frozen cherries
1/2 cup sugar 
2 strips lemon zest plus 1 tablespoon fresh lemon juice 
2 ounces rum 
1 ounce kirschwasser 
Vanilla ice cream, for serving 

Steps:

  • Put the cherries, sugar and lemon zest and juice in a large skillet and stir to combine. Cover and cook over medium heat until the sugar dissolves, about 4 minutes. Uncover and cook until the cherries get juicy, about 5 minutes more.
  • Mix together the rum and kirschwasser in a measuring cup, then add to the cherries. Ignite the alcohol with a long match and swirl the pan slightly until the flames subside, about 30 seconds. Serve the warm cherries and their juices over ice cream.
