2 cups cubed cooked chicken
1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
1 cup pineapple tidbits
2 celery ribs, chopped
1 tablespoon chopped green onion
1 tablespoon reduced-sodium soy sauce
1 can (3 ounces) chow mein noodles, divided

Steps:

Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. Fold in 1 cup chow mein noodles. , Transfer to a greased shallow 2-qt. baking dish. Sprinkle with remaining noodles. Bake, uncovered, until heated through, 20-25 minutes. If desired, top with additional green onions.

Ingredients

1 20-oz can pineapple chunks or tidbits in juice
1/4 cup reserved pineapple juice
1/4 cup flour
1/2 cup sugar
1 1/2 cups shredded sharp cheddar cheese
1/4 cup melted butter
1 1/2 cups butter cracker crumbles, divided

Steps:

Preheat oven to 350 degrees. Lightly spray a shallow 1-quart baking dish with cooking spray or rub with butter.
Drain pineapple, reserving 1/4 cup juice. If there isn’t quite enough juice, just add OJ or water.
Combine reserved juice and flour in a bowl then mix until smooth. Add sugar, drained pineapple and cheese then stir until combined. Gently stir in 1/2 cup cracker crumbles then spoon mixture into baking dish.
Stir remaining cup of cracker crumbles with melted butter then spread evenly over pineapple mixture.
Bake at 350 degrees for 20-30 minutes or until cheese is melted and crackers are starting to brown. Serve immediately.
