How to cook Israeli couscous (pearl couscous) image

Learn all the ways to cook Israeli Couscous (a.k.a. pearl couscous) with chicken stock, vegetable broth or water. Always fluffy and never sticky, makes a tasty side or delicious salads!

1 ½ cups (200 grams) Israeli couscous
1 tablespoon olive oil
4 cups water
1 teaspoon salt

Steps:

  • Saute: Add the couscous and the olive oil in a pot over medium/high heat and saute for 2-3 minutes, stirring constantly, until it starts to smell nutty and the pearls start to brown in certain parts.
  • Boil: Add the water and the salt and bring to a boil. Once the water starts to boil, reduce the heat to a gentle simmer and cook for 7-8 minutes. Taste the couscous and if it needs more time cook for additional 2 minutes.
  • Drain: Remove from the heat and drain through a sieve. Transfer to a bowl, add 1-2 teaspoons of olive oil (optional), fluff up with a fork and serve. You can also add ground black pepper, chopped parsley and lemon juice.

1 oignon
250 g carotte
250 g navet
250 g courgette
1 boîte concentré de tomates
4 morceau poulet (4 cuisses coupées par le boucher)
4 morceau agneau
4 merguez
boulettes de viande de boeuf (facultatif)
1 poivron rouge
1 poivron vert
1 boîte tomate pelée
1 boîte pois chiche
1/2 céleri
harissa
1 piment
quatre épices
epice à couscous
poivre
piment de cayenne
2 c à c safran
huile végétale

Steps:

  • Épluchez les carottes, navets, tête de céleri, courgettes, et coupez en morceaux. Nettoyez le tout et ajoutez-y les poivrons coupés en lamelles. Faites revenir la viande (sauf les merguez) dans de l'huile à feu vif de chaque coté.
  • Faites roussir l'oignon dans de l'huile. Ajoutez tous les légumes, du poivre, les épices et le piment.
  • Ajoutez un petit peu d'eau. Faites cuire à feu doux pendant 25 minutes.
  • Ajoutez la viande. Faites cuire 30 minutes.
  • Faites cuire la semoule et égrainez-la. Servez le couscous avec la semoule.
