CINNAMON-BROWN SUGAR POP-TART® CAKE RECIPE | ALLRECIPES
A buttery, crisp Pop-Tart® crust and a moist cinnamon brown sugar cake. Great for all ages and a fun party idea. I made this cake for my family and they all loved it (and some of them don't even like Pop-Tarts®!).

- Preheat oven to 325 degrees F (165 degrees C). Spray an 8-inch square pan.
- Crumble 4 toaster pastries into a bowl and mix in melted butter; press into the prepared pan creating a crust.
- Combine 1/4 cup brown sugar, 1 tablespoon flour, 1 teaspoon cinnamon, and 1 teaspoon milk in a bowl; spread over crust.
- Beat 1/2 cup brown sugar, softened butter, and white sugar together in a bowl; add egg yolk and vanilla extract and mix well. Combine 1 cup flour, baking powder, and salt in a separate bowl. Whisk 3/4 cup milk and vinegar together in a separate bowl.
- Mix flour mixture, alternating with milk-vinegar mixture, into butter mixture until batter is well mixed. Fold egg whites into batter. Crumble 1 toaster pastry over batter and fold. Pour batter over the crust.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 45 to 50 minutes. Cool cake completely, at least 1 hour.
- Spread frosting onto cake and crumble 1 toaster pastry over frosting.

These homemade Pop-Tarts® include all the flavor of the original, but don't contain any of the stuff you can't pronounce on the back of the box! They freeze well and can be filled with anything. Try pumpkin butter, cinnamon sugar, Nutella®, or peanut butter and jelly! Homemade fruit preserves are delicious as well! Top with confectioners' sugar.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Sift flour, 1 tablespoon sugar, and salt together into a bowl. Cut in chilled butter with a pastry blender or 2 knives until mixture resembles small peas. Add vanilla. Mix in cold water, 1 tablespoon at a time, until dough comes together and forms a ball.
- Divide dough into 2 pieces and wrap with plastic wrap; chill until firm, at least 1 hour.
- Beat softened butter, 1/4 cup sugar, and cinnamon together in a bowl to make filling.
- Roll out dough on a lightly floured work surface to 1/2-inch thickness. Cut dough into rectangles with a knife. Drop 1 tablespoon of filling onto half of the rectangles. Cover with remaining rectangles. Press edges with a fork to seal. Poke a few holes in the top of each pastry with a toothpick.
- Arrange pastries on the lined baking sheets.
- Bake in the preheated oven until golden brown, 25 to 30 minutes. Cool pastries on a wire rack, about 15 minutes.

- Bake for 25-30 minutes or until the top and edges start to brown. Cool for about 5 minutes on the pan on a rack. While the tarts are cooling, mix up the powdered sugar and maple syrup until smooth. The icing will be thick. When the tarts are still warm but not hot to the touch, spread a tablespoon or so of icing on top. Set aside for a minute and let the icing set. Serve tarts warm or at room temperature. These are best right out of the oven, but they can be heated up the next day, about 10 minutes in a 350-degree oven (no need to preheat). Tarts that haven’t been iced can be toasted.
