This is a common cold noodle salad in Japan, and always great to eat when the weather is hot. Enjoy!

3 tablespoons soy sauce
2 tablespoons white sugar
3 tablespoons white vinegar
5 tablespoons chicken stock
1 teaspoon sesame oil
½ teaspoon chili oil
2 (3 ounce) packages ramen noodles
1 egg, beaten
½ cucumber, julienned
1 carrot, grated
1 slice cooked ham, cut into thin strips
¼ sheet nori, cut into thin slices
1 tablespoon hot Chinese mustard

Steps:

  • Mix the soy sauce, sugar, vinegar, chicken stock, sesame oil, and chili oil together in a small bowl, and stir until the sugar dissolves. Set aside.
  • Bring a saucepan of water to a boil. Add the ramen noodles and cook for 2 minutes. Drain immediately, and refrigerate noodles until cold. Meanwhile, heat a small nonstick skillet over medium heat. Pour in the beaten egg and tilt the pan to thinly coat the bottom with egg. When firm, fold the egg in half and remove from the pan. Slice into thin strips.
  • To serve, place cold noodles on serving plates. Top with separate piles of egg, cucumber, carrot, and ham. Pour the sauce over the top and sprinkle with crumbled nori. Serve with a touch of hot mustard on the side.

1/2 c. chicken stock or low-sodium broth
1/4 c. plus 2 tablespoons soy sauce
1 tbsp. Dijon mustard
1 tbsp. unseasoned rice vinegar
1 tsp. Asian sesame oil
1/2 tsp. chili oil
1 medium carrot
1 lb. thin dried chuka soba noodles or egg noodles
2 tbsp. vegetable oil
3/4 lb. boneless pork
Salt and freshly ground pepper
3 tbsp. finely slivered fresh ginger
1 small green bell pepper
4 shiso leaves
2 scallions
1 c. mung bean sprouts

Steps:

  • In a small bowl, combine the stock, soy sauce, mustard, vinegar, sesame oil and chili oil. In a large pot of boiling water, blanch the carrot for 1 minute. Using a slotted spoon, transfer the carrot to a plate. Add the noodles to the pot and cook, stirring, until they are al dente, about 5 minutes. Drain the noodles and return them to the pot. Fill the pot with cold water and swish the noodles to cool them. Drain and repeat. Transfer the cooled noodles to a colander and lift them occasionally with your fingers to help dry them out. Meanwhile, in a large, deep skillet, heat the vegetable oil until shimmering. Add the pork slices in a single layer, season with salt and pepper and cook over high heat, without stirring, until browned on the bottom, about 2 minutes. Stir a few times, then add the ginger and stir-fry over moderately high heat until fragrant, about 2 minutes. Add the bell pepper and carrot and stir-fry for 1 minute. Add the noodles to the skillet and toss until well combined. Add the soy sauce mixture, shiso, scallions and bean sprouts and toss until heated through. Transfer to a large, shallow bowl and serve.

  • In a large pot filled with water, cook soba noodles according to package instructions. Drain noodles, reserving water, and transfer to a bowl. Drizzle with vegetable oil and toss together; set aside. Set up bowl of cold water with ice cubes. Cook green beans in soba noodle water for 2 minutes. Drain and rinse under cold water; transfer to ice bath. Meanwhile in a small bowl stir together soy sauce, brown sugar, rice vinegar and mustard powder. In a separate small bowl mix together 2 tablespoons cornstarch and 1/4 cup water. Set aside. Rinse and pat dry beef. In a mixing bowl, season with salt and pepper then toss together with remaining tablespoon cornstarch until well coated. In a large sauté pan over medium-high heat, add 2 tablespoons vegetable oil. When pan is hot but not smoking add beef and cook for 2 minutes on each side. Cook in two batches, then transfer to a plate. Add 1 teaspoon vegetable oil to sauté pan over medium-low heat. Cook garlic, onions and ginger for 2 minutes. Pour in sauce and stir in drained green beans and beef; increase to medium-high heat. Stir cornstarch slurry and pour into pan. Mix until everything is well coated and toss together with soba noodles. Transfer to bowls and garnish with green onions.
