My mother used to make this dessert whenever she could. During the Depression it was hard to find chocolate, but if she found some, she saved enough to make this pudding. I make it now and think of her every time I prepare it.

2 tablespoons sugar
1 tablespoon cornstarch
1 cup 2% milk
1/3 cup semisweet chocolate chips
1/2 teaspoon vanilla extract

Steps:

In a small saucepan, combine sugar and cornstarch. Add milk; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until thickened, 1-2 minutes longer. , Stir in chocolate chips; cook and stir until melted. Remove from the heat. Stir in vanilla. Spoon into dessert dishes. Serve warm or chilled.

2 (3.4 to 3.9-oz.) pkg. instant chocolate pudding and pie filling mix
2 3/4 cups cold milk
1 cup refrigerated or frozen whipped topping, thawed

Steps:

Prepare pie crust as directed on package for one-crust baked shell using 9-inch pie pan. Cool 15 minutes or until completely cooled.
In large bowl, combine pudding mix and milk; beat 2 minutes with wire whisk. Pour into cooled baked shell. Refrigerate at least 1 hour or until set. Top with whipped topping before serving. Garnish as desired. Store in refrigerator.

Stir over medium heat until the mixture just barely comes to a boil and becomes thick, about 6-8 minutes (maybe less, maybe more; just watch it!) The second it starts to bubble and thicken (note: It should be thick like pudding!) remove it from the heat. Add the chocolate, vanilla, and butter, and stir until everything is beautifully combined. Pour the pudding into the pie crust (if there is extra, spoon it into small dishes) and place in the fridge to chill for 4 hours uncovered. Cut into slices and serve with whipped cream!
