A low-calorie version of the kinds of lettuce wraps you might get at PF Changs. I modified several lettuce wrap recipes to use lower calorie ingredients and ended up with something we really enjoyed. We hope you enjoy it too!

2 boneless chicken breasts, cooked
5 ounces shrimp, cooked
1/4 cup scallion
1 head iceberg lettuce
2 tablespoons soy sauce
1 1/4 tablespoons brown sugar
1 teaspoon rice wine vinegar
1/4 cup Splenda granular
1/2 cup water
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
2 tablespoons soy sauce

Steps:

  • PREPARE STIR FRY SAUCE (May be done several days ahead): Mix together brown sugar, 2T soy sauce and rice wine vinegar.
  • PREPARE WRAP SAUCE (May be done several days ahead) Mix together Splenda, water, rice wine vinegar, ketchup, lemon juice and soy sauce. Put aside in a bowl to chill and let flavors blend
  • Dice chicken breasts and sautee' in Pam in a non-stick skillet.
  • Remove chicken from skillet. Using a knife or a food processor, chop or process both the chicken and shrimp VERY finely. (I really like the rough, crumbly texture you get when you use the food processor on pulse.)
  • Return shrimp and chicken to pan. Add stir fry sauce. Let simmer for a few minutes for flavors to blend. Add scallions.
  • Slice off root of lettuce head. Pull your lettuce cups off the outside of the head of lettuce. (Chop up remaining lettuce to use in salads.)
  • Serve the meat in a bowl, with the lettuce cups on the side. To eat, spoon the mixture using a slotted spoon into the cup of lettuce and pour some of the special sauce over the mixture. Fold up the lettuce up like a tortilla and eat over a bowl.
  • Serve with some rice to absorb the tasty sauces!

Chicken + Shrimp Lettuce Wraps

1 Tbsp avocado or olive oil
1 yellow or white onion, chopped
3 fresh garlic cloves, chopped or minced
1-inch knob fresh ginger, finely minced
1 large carrot, peeled and very small diced
3 crisp celery ribs, diced
8 button mushrooms, diced
1 lb ground chicken
1 lb raw medium shrimp, peeled and deveined, diced
sea salt and ground pepper, to taste
Sauce:
1/4 cup all-natural peanut butter
3 Tbsps coconut aminos liquid, tamari, Braggs liquid aminos, or low sodium soy sauce
3 tsps hot sauce of choice, optional
3 Tbsps hot water, to thin
Serve and garnish:
2 heads butter lettuce, rinse and air dry
4 Tbsps peanuts or cashews, roughly chopped
2 green onions, thinly sliced

Steps:

  • Heat your oil in a large skillet over medium-high heat.
  • Add in the onion, garlic, ginger, carrot, celery, and mushrooms then sauté for about 3 minutes, or until the onion is tender. Add in the ground chicken mincing it with a wooden spoon as it cooks. Cook for about 5-7 minutes, or until fully cooked through.
  • Push everything over to one side of the skillet then stir in the shrimp and cook for 3 minutes in the open area of your skillet, or until the shrimp is pink and opaque. Lightly sea salt and pepper to taste. Gently stir everything together once your shrimp are nicely browned on each side.
  • Meanwhile, in a small jar or bowl, add all of your sauce ingredients and whisk really to combine.
  • Drizzle your sauce over your chicken and shrimp mixture then stir fry for 1 minute more, or until the sauce nicely coats all of the ingredients.
  • To assemble your lettuce wraps, take spoonfuls of the chicken-shrimp mixture and load each lettuce wrap. I like to double up my lettuce leaves so they are sturdier.
  • Garnish with chopped peanuts and green onions.
  • Enjoy!
