CLASSIC CHICKEN MARYLAND RECIPE - FOOD.COM
This rich, delicious dish will leave you and your sweetie feeling very satisfied. It'll be on the table in no time so it's useful for a quick weeknight meal. I designed this for 2 but you can easily double or even triple this for a larger group. Serve over rice, pasta or biscuits.

Steps:
- In a medium skillet, melt butter and heat together with olive oil.
- Meanwhile, fillet chicken breasts so they are thinner and dredge in the flour seasoned to your taste with salt, pepper and garlic powder.
- Saute chicken in hot butter/oil until golden brown on both sides, about 7 minutes per side.
- Add cream, wine, dijon mustard, salt and pepper to taste and crabmeat. Simmer 5 minutes. Serve over rice.
- If serving over biscuits, remove the chicken from the pan after browning and dice into chunks then return to pan and proceed with the rest as written.

ROASTED CHICKEN MARYLANDS WITH CHILLI AND HONEY RECIPE ...
This buttery, spicy chicken dinner is perfect for feeding a family on a cold winter’s night. If you prefer a more mild version just subsitute half the chilli sauce with tomato sauce.

Steps:
1. Heat your oven to 180C fan-forced. Add the Marylands to a baking dish with the oil and toss to coat, then arrange skin-side up in a single layer. Season with salt and squeeze over the juice of the lemon segments. Add the squeezed segments to the baking tray with the chicken. Bake for 30 minutes.
2. Microwave the butter and honey in a heatproof bowl for 30 seconds until they are liquid. Combine with the chilli sauce and fish sauce or soy sauce and brush half of the mixture over the chicken. Bake for a further 25 minutes, glazing with the other half of the mixture with 10 minutes to go, until the chicken is glazed and caramelised.3. Rest for 5 minutes, scatter with the chives and serve.
