Whip up this easy-to-make-ahead pudding that's perfect for a quick breakfast or snack. Chia seeds are full of nutrition and will keep you full for hours! You can get as creative as you want with toppings for a personalized meal. This recipe supports the Phase 2 diet plan. This recipe makes 5 servings at 108 calories per serving (not including toppings).

Number Of Ingredients 3

1/2 Cup chia seeds
2 Cups unsweetened almond milk (or milk of choice)
Toppings of choice (fruit, honey, cinnamon, etc.)

Steps:

  • 1. Add chia seeds and milk to a mason jar or glass Tupperware.
  • 2. Using a fork, whisk the chia seeds and milk together, let sit for 1-2 minutes, whisk again, then cover and refrigerate for at least 1 hour or overnight.
  • 3. The chia seeds will absorb the liquid and become a gel-like pudding consistency. 
  • 4. Add a serving of the pudding to a bowl and top with desired toppings and enjoy.

2 tsp.

maple syrup, honey, or agave nectar

Sliced fruit, granola, jam, or nuts for serving

Steps:

  • In a medium bowl, whisk to combine chia seeds, milk, sweetener of your choice, vanilla if using, and salt. Cover and refrigerate until thick, 2 hours up to overnight.  Serve with mix-ins and toppings of your choice.
