- In a blender, mix and blend all ingredients till smooth. Chill for a couple of hrs before serving. Don't taste the sauce till it has chilled. If you taste it right after blending, it will not taste "salty sufficient." But let the sauce refrigerateand let the flavors develop and it will be great! Serve with white corn tortilla chips. This recipe yields 4 c.. Yield: 4 c.

I found this recipe on CopyKat Recipes about ten years ago. It no longer appears to be on the site. I've never tried it, but want to put it here for safekeeping. I used to live in Waco, and loved to eat at Casa Ole - their green sauce was one of my favorite things.

I originally posted this recipe in Sep of 2006. After analyzing the flavors of the Casa Ole Green Sauce I modified the recipe for a closer match. Omit the fajita seasoning and add one tablespoon of cumin. I also use half a bunch of fresh cilantro. Cut the sour cream in half.
