ROASTED TURKEY BREAST | WILLIAMS SONOMA

Roasted Turkey Breast | Williams Sonoma image

Turkey is very high in protein and low in both total fat and saturated fat. Roasting a turkey breast is much easier than roasting the whole bird. It also lets you cook the white meat perfectly, rather than have it dry out while waiting for the dark meat to finish cooking. The breast is easy to turn, allowing it to self-baste as it roasts. Always buy a fresh turkey breast to ensure the most succulent result. Roasted turkey breast is versatile, perfect for hot or cold slices or for sandwiches and salads.

Provided by WILLIAMS-SONOMA.COM

Total Time 150 minutes

Prep Time 30 minutes

Cook Time 120 minutes

Yield 12 servings

Number Of Ingredients 10

1 large yellow onion, halved
2 large carrots
2 large celery stalks
1 large parsnip
1 garlic clove (optional)
1 bone-in whole turkey breast, 6 to 8 lb.
1 Tbs. unsalted butter, at room temperature
1 tsp. kosher salt
1/8 tsp. freshly ground pepper
3 to 4 cups low-sodium, fat-free chicken broth

Steps:

 • Position a rack in the lower third of an oven and preheat to 450°F.
 • Place the 2 onion halves next to each other in the center of a roasting pan. Line up the carrots, celery and parsnip on either side. If using the garlic, tuck it in among the other vegetables.
 • Rinse the turkey breast and pat dry with paper towels. Working your hand carefully under the skin of the turkey to avoid tearing it, separate the skin from the meat on both sides of the breast, but do not detach it. Pat the meat dry with a paper towel. Rub butter over the meat under the skin on each side of the breast. Season with the salt and pepper. Pull the skin down to cover the meat. If necessary, stick toothpicks through the skin and the ribs to secure the skin. Set the breast, skin side down, on top of the vegetables. Pour in 3 cups of the broth. Roast for 30 minutes. Reduce the oven temperature to 325°F. Turn the breast to rest on one side and baste with the liquid in the pan. Roast for another 30 minutes. Turn the breast to rest on the opposite side and baste again with the pan liquid. Roast for another 30 minutes. Turn the breast skin side up and baste again. If the liquid has begun to evaporate, add the remaining 1 cup broth to the pan. Roast for another 30 minutes, baste and then continue roasting until an instant-read thermometer inserted into the thickest part away from the bone registers 165°F, 2 to 2 1/2 hours total at 20 minutes per pound. If the top of the breast begins to overbrown, tent loosely with aluminum foil.
 • Remove the turkey breast from the oven and transfer to a cutting board. Let it rest for 20 minutes. (The internal temperature of the meat will rise to 170°F during the first 10 minutes of resting, and the juices will settle.) Carve into slices and serve immediately. Serves 10 to 12.

TURKEY RUB: FOOD NETWORK RECIPE | THE NEELYS | FOOD NET…

Turkey Rub: Food Network Recipe | The Neelys | Food Net… image

Make this turkey rub from Food Network, which has thyme, rosemary, sage and garlic powder.

Provided by Patrick and Gina Neely : Food Network

Total Time 3 hours 45 minutes

Prep Time 15 minutes

Cook Time 3 hours 0 minutes

Yield 12 to 14 servings

Number Of Ingredients 16

2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 teaspoon dried sage
1/2 teaspoon garlic powder
1 (14 to 16 pound) turkey, rinsed, patted dry inside and out (neck, heart, and gizzard reserved
Salt and freshly ground black pepper
2 tablespoons olive oil
Turkey or chicken stock
2 garlic cloves, thinly sliced
2 shallots, finely chopped
3 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
1/2 cup sour cream
Kosher salt and freshly ground black pepper

Steps:

 • Preheat the oven to 325 degrees F.
 • Mix all of the dry rub ingredients in a small bowl.
 • Put the turkey on a rack in a roasting pan.
 • Generously season the turkey cavity with salt and pepper, to taste. Brush the turkey with olive oil, and rub it with the seasoning mixture. Tie the legs together loosely to hold their shape, and tuck the wing tips under.
 • Roast the turkey until an instant-read thermometer inserted into the thickest part of thigh registers 165 to 170 degrees F, about 3 hours.
 • Transfer the turkey to a platter. Tent it very loosely with foil, and let it rest for at least 30 minutes (the internal temperature will rise 5 to 10 degrees). Reserve the juices in the pan.
 • Gravy: Scrape the juices and browned bits from the roasting pan into a large glass measuring cup. Spoon off the fat, reserving 2 tablespoons. If necessary, add enough stock to the juices to measure 1 2/3 cups.
 • Heat the reserved 2 tablespoons fat in a heavy, large saucepan over medium-high heat. Add the garlic, and shallots, and saute for 2 minutes. Add the flour and whisk until golden, about 4 minutes. Add the degreased pan juices, and the 2 cups stock. Bring to a boil, whisking until smooth. Reduce the heat and simmer until the gravy is reduced to the desired consistency, about 4 minutes. Whisk in the lemon juice, and the sour cream. Season the gravy with salt and pepper, to taste. Pour the gravy into a serving bowl. Carve the turkey and arrange it on a serving platter. Serve the turkey with the gravy.

 • GET AHEAD 1. Check the main turkey cavity for the bag of giblets; if they’re in there, remove and tip them into your roasting tray, discarding the bag. The added flavour they’ll give your gravy will be incredible – trust me. 2. Peel the onions, wash the carrots and roughly chop with the celery or the leek tops, then add to the tray with the unpeeled garlic cloves. 3. Place your stuffing in the neck cavity, then pull the skin back over it and tuck it under the bird. You’ll get a good contrast between the soft, juicy stuffing here inside the turkey, and the crispier stuff you can bake separately in a dish. 4. Place the softened butter on a board and press down with your hands. Pick over 3 sprigs of thyme, finely zest ½ a clementine and season with sea salt and freshly ground black pepper, and scrunch all together to make your flavoured butter. 5. Halve the clementines and place in the main turkey cavity with the remaining thyme – not filling it too full allows hot air to circulate, cooking the bird from the inside out and from the outside in. 6. Get your turkey and use a spatula to work your way between the skin and the meat. Start at the side of the cavity just above the leg and work gently up towards the breastbone and towards the back so you create a large cavity. Pick up your butter and push it into the cavity you’ve created. Use your hands to push it through the skin right to the back so it coats the breast meat as evenly as possible. Do the same on the other side. 7. Drizzle the turkey all over with 1 tablespoon of olive oil and generously sprinkle from all sides with salt and pepper. 8. Cover the turkey snugly with tin foil and place it on top of the trivet in the tray. ON THE DAY 1. Take your turkey out of the fridge 1 hour before it’s due to go in the oven. 2. Preheat the oven to 180°C/350°F/gas 4. 3. You want to cook a higher-welfare bird for 25 to 30 minutes per kg and a standard bird is 35 to 40 minutes per kg. For a 4kg bird, pop it in the oven for 1 hour 40 minutes, basting several times with all the lovely juices in the tray and covering with foil when beautifully golden brown. 4. The simplest way to check it’s cooked is to stick a knife into the thickest part of the thigh – if the juices run clear, it’s done. 5. Use heavy-duty tongs to lift up your bird so all the juices run from the cavity into the tray, then transfer the turkey to a platter and leave to rest for up to 2 hours while you crack on. You can cover it with a double layer of tin foil and a clean tea towel to keep warm, if you like. 6. Skim away the fat from the turkey tray, save it in a jar, and leave to cool. When cold, transfer to the fridge for cooking with at a later date. CARVING THE TURKEY 1. Once the turkey has rested, it’s time to carve. There are two ways you can do this. - The first method is to remove the wings, slice the skin beside the legs, then pull out and chop the legs off. You can either slice or pull this brown meat – it’s so tasty. Keep it warm while you move on to the breast meat. Use the full length of the knife in a nice smooth action to slice through the breast meat, transferring it to a platter as you go. - Alternatively, remove the leg as above, then feel where the backbone is and cut with the length of your knife all the way down beside it until you hit the carcass. You can then lift the whole breast off the bone. Remove to a board and slice.

 • Carve the turkey. Transfer the turkey to a clean cutting board. Starting at the breast bone, carve the turkey. Continue carving, keeping your knife as close to the ribs as possible, until the whole breast is carved from the bone; some meat will still be left on the bone. Once no longer attached to the bone, slice the breast crosswise into slices.
