Number Of Ingredients 14

1 Whole Chicken
1 Tbsp Salt
1 Qt. Water
1½ Qt. Ice water
1 Tbsp Cooking oil
4 Oz. Shallot
3 Oz. Garlic Bulbs, peeled
1 Oz. Ginger, sliced
4 Stalks Green onions, cut into 1/2 inch pieces.
1 Tbsp Knorr chicken powder
1 Cup Rock sugar
1 Cup Supreme soy sauce
½ Cup Rose wine
½ Tsp Salt

Steps:

  • Marinate the whole chicken with salt for 10 minutes.
  • Boil a pot of water and place the whole chicken into the pot. Blanch the chicken for 10 seconds, and transfer from the simmering water to the ice bath. Repeat 2-3 times until the chicken skin is set.
  • In a pot over medium-low heat, add 1.5Qt water, rock sugar, Knorr Chicken Powder, premium soy sauce, green onion, ginger, Chinese rose wine, brown shallots, garlic, and whole chicken. Simmer for 25-30 minutes, and flip the chicken every 5-10 minutes. Then, turn the heat up, cook a few more minutes until the sauce thickens and chicken skin turns brown.
  • Cool the chicken, then cut into slices and serve.
