Another great vegetarian soup. Hint: Using vegetable soup instead of water will give this soup a richer flavor.

Number Of Ingredients 12

7 1/2 cups water
1/2 teaspoon crushed dried oregano
5 whole peppercorns
2 bay leaves
1 lb tofu, diced
1 (16 ounce) can diced tomatoes
1 (16 ounce) can cut green beans
2 medium carrots, thinly sliced
1 medium white onion, chopped
1/2 cup red wine
1/2 teaspoon red pepper flakes
1 head cabbage, chopped

Steps:

  • In a soup kettle, combine water, oregano, peppercorns and bay leaves.
  • Bring to a boil, then reduce to a simmer, cover lightly, and cook, stirring occasionally for about 10 minutes.
  • Remove from heat, strain and discard vegetable matter, and return liquid to the pot.
  • Add the tofu, tomatoes, beans, carrots, onions, and wine.
  • Return to a boil, reduce to a simmer, and continue to cook, stirring, for about 10 minutes.
  • Add the pepper flakes and cabbage, and continue to cook for about 20 minutes longer, or until all the vegetables are tender.
  • Adjust salt and pepper to taste and serve immediately.

Miso soup is a traditional Japanese soup consisting of miso paste mixed with stock. Many ingredients are then added depending on the season, region, and, of course, preference. Our version has cabbage, tofu, veggies, and, a touch of spices. Along with a rice cake, it’s the main part of a traditional Japanese breakfast!

Number Of Ingredients 12

4 cups of vegetable stock
0.5 ounce ginger, sliced
3 garlic cloves, thinly sliced
½ red chili, thinly sliced
7 ounces of savoy cabbage, shredded
1 teaspoon salt
1 teaspoon pepper
7 ounces of tofu with caraway
1 tablespoon miso paste
1 tablespoon soy sauce
parsley
1 baguette

Steps:

  • Heat a saucepan over medium heat and add the vegetable stock.
  • Bring it to a boil, and add the ginger, garlic, and red chili. Cover with a lid and let it simmer for 5 minutes.
  • Add the savoy cabbage, carrot, and season with salt and pepper.
  • Stir, and cook for 3 minutes. In the meantime, cut the tofu in small cubes. Add it in the soup, along with the miso paste, and soy sauce. Stir, and leave the soup on heat for 4-5 more minutes.

    1. Pour the stock into a pan and bring to the boil.
    2. Peel and julienne the ginger, peel and finely slice the garlic, then deseed and chop the chilli. Add to the stock, cover and simmer for 5 minutes.
    3. Core and shred the cabbage. Peel and julienne the carrot, then add to the pan, cover and simmer for a further 3 to 4 minutes, or until the cabbage is wilted.
    4. Stir in the miso paste and a good splash of soy sauce to taste.
    5. Add the tofu and let it stand for a few minutes before serving.

Add the red pepper and stir-fry for 1 minute, or until it begins to soften, and add the cabbage and walnuts. Stir-fry for 1 minute, add salt and pepper to taste, and stir-fry for another 1 to 2 minutes, until crisp-tender.
