3-Ingredient Cranberry-Brie Bites Recipe | EatingWell image

Baked Brie is a perennially popular appetizer. Here, we complement the Brie with tart cranberry sauce and bake it in pretty individual tartlets using premade pie crust for an ultra-easy crowd-pleasing appetizer.

1 (7 to 8 ounce) prepared pie crust (1/2 of a 14 ounce package; see Tip)
½ cup prepared cranberry sauce or homemade (see associated recipe), divided
3 ounces Brie cheese, cut into 24 pieces, divided
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 450 degrees F. Lightly coat a mini muffin tin with cooking spray.
  • Unroll pie crust onto a cutting board or clean surface. Flatten dough to about 12 inches in diameter. Cut 24 2-inch circles out of the dough with a biscuit cutter, rerolling scraps if needed. Place the dough circles in the muffin tin cups, gently pressing on the bottom and sides. Prick the dough with a fork. Bake until lightly browned, 5 to 7 minutes. Remove from the oven.
  • Add 1 teaspoon cranberry sauce to each cup, then top with a piece of Brie. Return to the oven and bake until the sauce is hot and the cheese has melted, about 5 minutes more. Let cool for 10 minutes. Sprinkle with chives, if desired, and serve warm.

1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count) or 1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet
1 round (8 oz) Brie cheese
1 egg, beaten

Steps:

  • Heat oven to 350°F.
  • If using crescent rolls: Unroll dough; separate crosswise into 2 sections. Pat dough and firmly press perforations to seal, forming 2 squares. If using dough sheet: Unroll dough; cut crosswise into 2 rectangles. Pat dough to form 2 squares.
  • Place 1 square on ungreased cookie sheet. Place cheese on center of dough. With small cookie or canapé cutter, cut 1 shape from each corner of remaining square; set cutouts aside.
  • Place remaining square on top of cheese round. Press dough evenly around cheese; fold bottom edges over top edges. Gently stretch dough evenly around cheese; press to seal completely. Brush with beaten egg. Top with cutouts; brush with additional beaten egg.
  • Bake 20 to 24 minutes or until golden brown. Cool 15 minutes. Serve warm.
