Make the perfect light and crispy waffles without any milk!

6 tbsp melted and cooled butter
2 tbsp sugar
1 tbsp baking powder
2 large eggs at room temperature
1? cup of all purpose flour
1 tsp vanilla extract
1½ cup of water
Optional: fresh berries, sauce, melted chocolate, peanut butter, sugar for toppings

Steps:

  • In a large mixing bowl, whisk together the butter, eggs, sugar, and vanilla extract, and mix until thoroughly combined and smooth.
  • Then, add the flour and baking powder and mix.
  • Next, pour in the water, and stir until the mixture is once again smooth.
  • Then, preheat the waffle iron, and pour ½ cup of the batter onto the waffle iron.
  • Close your waffle iron and cook in reference to the specific manufacturer instructions.
  • Serve up waffles warm with optional toppings.

2 large, separated eggs
½ cup melted unsalted butter
2 cups whole milk
1 tbsp vanilla

Steps:

  • Spray the waffle maker with a bit of oil.
  • Into a large bowl, sift the flour and baking powder then add the salt and sugar, mixing well.
  • Using a hand mixer with the egg whites in a small bowl, beat them to stiff peaks that stand straight up.
  • In a second bowl, whisk the egg yolks, butter, milk, and vanilla together.
  • Whisk the butter mixture into the flour mixture until just combined, then gently fold in egg whites and pour ? cup servings into the Belgian waffle maker to cook as directed.
