Steps:
- Heat oven to 350°F. Spray 2-quart casserole with nonstick cooking spray. Cook rotini as directed on package. Drain.
- Meanwhile, melt margarine in large saucepan over medium heat. Add garlic; cook and stir 30 to 60 seconds. Stir in flour and pepper; cook and stir until mixture is bubbly. Gradually add milk, stirring constantly, until mixture boils and thickens. Remove from heat. Reserve 1 tablespoon each American and mozzarella cheese for top. Add remaining cheeses to sauce; stir until melted.
- Add cooked rotini to cheese sauce; stir gently to coat. Pour into sprayed casserole. Sprinkle with reserved cheeses.
- Bake at 350°F. for 20 to 25 minutes or until bubbly around edges.

- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain pasta and return to pot. Stir Alfredo sauce and 3/4 pound Cheddar cheese into pasta until cheese begins to melt. Pour pasta mixture into a 9x13-inch baking dish; top with bread crumbs and 2 tablespoons Cheddar cheese.
- Bake in the preheated oven until cheese is melted and bread crumbs are golden brown, about 30 minutes.

- *NOTES: I prefer to use a mixture of mild and sharp cheddar. Use Colby or whatever flavor cheese that you like to make it your own. If you like pepper, granulated garlic or onion then add it - I don't think it needs it but make it to your taste.
