1 tablespoon olive oil
1 medium sweet onion, halved and thinly sliced
1 log (4 ounces) fresh goat cheese, crumbled
1/4 cup finely chopped oil-packed sun-dried tomatoes, drained
Dough for single-crust pie or 1 sheet refrigerated pie crust
Cooking spray

Steps:

  • In a large skillet, heat oil over medium heat. Add onion; cook and stir until softened, 4-5 minutes. Reduce heat to medium-low. Cook, stirring occasionally, until deep golden brown, 30-40 minutes. Remove from heat. Let cool slightly. Gently stir in goat cheese and tomatoes., Preheat air fryer to 375°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a floured 3-in. round biscuit cutter. Place 1 heaping teaspoon filling on half of each circle. Brush edges of pastry with water; fold circles in half. With a fork, press edges to seal., In batches, arrange empanadas in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 4-5 minutes. Turn; spritz with cooking spray. Cook until golden brown, 4-5 minutes longer.

Puff pastry is wrapped around nicely seasoned ground beef and then cooked in the air fryer, creating the crispiest empanadas you'll ever have. It takes just under an hour to prepare these delightful snacks that are great for on-the-go eating or as an appetizer.

1 package puff pastry dough
1 tablespoon canola oil
¼ pound lean ground beef
¼ cup chopped white onion
¼ cup chopped red bell pepper
1 teaspoon ground cumin
½ teaspoon sweet paprika
¼ teaspoon dried oregano
kosher salt and freshly ground black pepper to taste
1 egg
1 tablespoon water
cooking spray

Steps:

  • Let puff pastry dough sit for 15 minutes at room temperature.  Heat oil in a skillet over medium-high. Add beef and onion; cook and stir, breaking ground beef into crumbles, until starting to brown, about 3 minutes. Add red bell pepper; cook, stirring occasionally, until red bell pepper is starting to soften, about 4 minutes. Season ground beef mixture with cumin, paprika, oregano, salt, and ground black pepper. Drain oil and transfer ground beef filling to a bowl; let cool 5 minutes.  Cut puff pastry into rounds, about 6 inches in diameter. Preheat air fryer to 400°F (200°C). Place 1 to 2 tablespoons filling in the center of each puff pastry round. Brush water around half of outer edge of each round. Fold round over filling and pinch edges to seal. Using a fork, crimp edges. Repeat process with remaining wrappers and filling. Beat egg and 1 tablespoon water together in a bowl to form an egg wash. Brush each empanada with egg wash and spray with cooking spray. Place empanadas in single layer in air fryer basket and cook for 5 minutes. Flip empanadas and continue cooking until light golden brown, about 5 minutes more. Repeat with remaining empanadas.
