- In a large skillet, heat oil over medium heat. Add onion; cook and stir until softened, 4-5 minutes. Reduce heat to medium-low. Cook, stirring occasionally, until deep golden brown, 30-40 minutes. Remove from heat. Let cool slightly. Gently stir in goat cheese and tomatoes., Preheat air fryer to 375°. On a lightly floured surface, roll dough to 1/4-in. thickness. Cut with a floured 3-in. round biscuit cutter. Place 1 heaping teaspoon filling on half of each circle. Brush edges of pastry with water; fold circles in half. With a fork, press edges to seal., In batches, arrange empanadas in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown, 4-5 minutes. Turn; spritz with cooking spray. Cook until golden brown, 4-5 minutes longer.

AIR FRYER EMPANADAS RECIPE | COOKING LIGHT
Traditional meat-filled empanadas can be a double-whammy of fat and calories due to ground beef and a trip to the deep fryer; This air fryer twist is even healthier thanks to the addition of mushrooms, which lighten the filling while keeping it nice and moist. We love the buttery flavor of Castelvetrano olives, but you can use any green olives you have on hand. These handheld snacks are great for tailgating, or serve them over greens for a hearty supper.

- Heat oil in a medium skillet over medium-high. Add beef and onion; cook, stirring to crumble, until starting to brown, 3 minutes. Add mushrooms; cook, stirring occasionally, until mushrooms are starting to brown, 6 minutes. Add garlic, olives, paprika, cumin, and cinnamon; cook until mushrooms are very tender and have released most of their liquid, 3 minutes. Stir in tomatoes, and cook 1 minute, stirring occasionally. Transfer filling to a bowl, and let cool 5 minutes. Arrange 4 gyoza wrappers on work surface. Place about 1 1/2 tablespoons filling in center of each wrapper. Brush edges of wrappers with egg; fold wrappers over, pinching edges to seal. Repeat process with remaining wrappers and filling. Place 4 empanadas in single layer in air fryer basket, and cook at 400°F until nicely browned, 7 minutes. Repeat with remaining empanadas.

- Let puff pastry dough sit for 15 minutes at room temperature. Heat oil in a skillet over medium-high. Add beef and onion; cook and stir, breaking ground beef into crumbles, until starting to brown, about 3 minutes. Add red bell pepper; cook, stirring occasionally, until red bell pepper is starting to soften, about 4 minutes. Season ground beef mixture with cumin, paprika, oregano, salt, and ground black pepper. Drain oil and transfer ground beef filling to a bowl; let cool 5 minutes. Cut puff pastry into rounds, about 6 inches in diameter. Preheat air fryer to 400°F (200°C). Place 1 to 2 tablespoons filling in the center of each puff pastry round. Brush water around half of outer edge of each round. Fold round over filling and pinch edges to seal.
