Best of Both Worlds Roast Chicken Recipe | Allrecipes image

Want a crispy skin on a chicken that's tender and moist inside? Try this...it takes a little tending in the beginning, then you're home free!

Yield 1 whole roast chicken

Number Of Ingredients 10

1 (4 pound) whole chicken
1 tablespoon butter
salt and ground black pepper to taste
½ onion, coarsely chopped
1 stalk celery, cut into 4 pieces
½ lemon, cut into 4 pieces
3 cloves garlic, sliced
2 tablespoons butter
1 teaspoon dried parsley
1 teaspoon dried Italian herb seasoning

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Remove giblet packet from cavity of chicken and pat bird thoroughly dry with paper towels. Place 1 tablespoon butter into chicken cavity, sprinkle salt and black pepper into cavity, and stuff cavity with onion, celery, and lemon pieces. Loosen skin over breast and thigh of chicken with your fingers and insert garlic slices under the skin. Place the chicken breast side up on a rack set into a roasting pan.
  • Melt 2 tablespoons butter in a small saucepan over medium-low heat; add dried parsley and Italian seasoning. Pour half the butter-herb mixture over the chicken and rub the seasoned butter onto all parts of chicken. Reserve remaining butter mixture.
  • Roast chicken in the preheated oven for 20 minutes, then remove and turn chicken so breast side is down. Pour remaining half of seasoned butter over the chicken, brushing it over all parts of the bird. Return to oven and roast an additional 10 minutes.
  • Reduce oven heat to 325 degrees F (165 degrees C). Roast chicken until skin is crisp and brown and the juices run clear, 1 hour and 20 more minutes. An instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, should read 160 degrees F (70 degrees C). Let chicken rest, uncovered, for 10 minutes before serving.

Even with my history of yeast-related struggles, this bread seemed like something I might actually be able to pull off. But this bread is so easy, not only did I make bread with this recipe, I made GOOD bread! And you can, too!

Number Of Ingredients 4

3 1/4 cups all-purpose flour
1 1/2 – 2 tsp kosher salt
1/2 tsp active dry yeast
1 1/2 cups warm water

Steps:

  • Start by whisking the flour, salt, and yeast together in a medium-sized bowl.
  • Gradually add the water to the dry mixture, and stir using a wooden spoon. Mix the dough gently and form it into a ball.
  • Transfer the dough ball to a large ungreased bowl. Cover the bowl with plastic wrap, then place it out of the way in a room-temperature area. Let the dough rise for 12-18 hours, or until the surface is covered in bubbles and the dough has at least doubled in size.
  • When the dough is ready, place a Dutch or French oven into your oven and turn it on to 450°F. Let the Dutch oven warm up for about 30 minutes or so.
  • Transfer the dough to a floured surface. Fold the corners of the dough under to form a smooth, rounded surface. Place the dough on a large square of parchment paper, then dust with flour and let it rest for 15 minutes.
  • Next, use a sharp knife to score an X-shape into the top of the dough. (The cuts should be shallow and just a few inches long.) Then use a spray bottle on the mist setting to spray the top of the dough lightly with water.
  • Remove your preheated Dutch oven from the oven, and place the parchment paper and dough inside. Cover the Dutch oven and bake for 30 minutes.
  • After 30 minutes, remove the lid and bake your bread for an additional 8-15 minutes. You want the top to be nice a dark, but not burnt. Remove from the oven and transfer your bread to a cooling rack. Allow to cool for 30 minutes before slicing.
  • Slather a piece of your homemade bread in butter or jam, and enjoy! :-)
