This is a great sauce to serve over gingerbread! It has been my favorite dessert since I was a child!

Yield 2 1/2 cups

Number Of Ingredients 5

1 cup white sugar
1 tablespoon cornstarch
2 cups water
¼ cup butter
2 teaspoons vanilla extract

Steps:

  • In a saucepan, combine the sugar and cornstarch. Whisk in the water, stirring until blended. Bring mixture to a boil and continue to cook for 1 minute, stirring constantly. Remove from heat and mix in the butter and vanilla. Serve warm.

Infusing this simple custard sauce with a vanilla bean adds rich flavor. Try it on your favorite summer shortcake or fruit pie.

2 cups low-fat milk
1/2 vanilla bean, split lengthwise (see Substitution Tip)
2 large eggs
? cup granulated sugar
Pinch of salt

Steps:

  • Bring milk and vanilla bean almost to a simmer in a small heavy saucepan over low heat. Remove from heat, cover and let steep for 30 minutes.
  • Whisk eggs, sugar and salt in a mixing bowl until well combined.
  • Reheat milk over low heat until steaming. Gradually add to egg mixture, whisking constantly. Return mixture to the saucepan.
  • Cook over low heat, stirring constantly, until thick enough to coat the back of a metal spoon, 7 to 8 minutes. Do not let sauce come to a simmer.
  • Pour sauce through a fine-mesh sieve into a clean bowl. Scrape seeds from vanilla bean and stir them into sauce. Cover surface with plastic wrap and refrigerate until chilled, about 2 hours.

Scrape down sides of the bowl, and process again drizzling in all but about 2 Tbs of water. Process for another 30 seconds or until the sauce is smooth. Taste for salt and check for consistency. If a thinner sauce is desired add the remaining water or more if needed. It should be about as thick as mayo.
