This is a very elegant appetizer. Make sure to 'gently' pat down the brown sugar (perhaps sprinkling would be better). The first time I made it I was not gentle and the crust was much to hard (but still delicious). Some reviewers have suggested using less sugar which sounds like a good option. You be the judge. Either way, it's sure to be a hit at your next get together.

Number Of Ingredients 4

1 (24 ounce) brie round, not fully ripened, top rind removed (8 inch)
1 cup chopped pecans
2 cups firmly packed brown sugar
cracker

Steps:

  • Preheat broiler.
  • Place Brie in 10-inch quiche dish or other oven-proof dish or pie plate and sprinkle with nuts.
  • Cover top and sides with sugar, patting gently with fingertips (do not be concerned if sides are not fully covered).
  • Broil on lowest rack until sugar bubbles and melts, about 3 minutes (cheese should retain its shape).
  • Serve immediately with crackers.

  • 1 11x17" sheet of frozen puff pastry, defrosted

  • 1-pound wheel of Brie cheese, about 5 inches in diameter

  • 2 tablespoons raspberry jam

  • 1/4 cup sliced almonds, toasted*

  • 1 egg, beaten with a splash of water

  • 1 box water crackers

Steps:

  • Pre-heat the oven to 350°F.Spread the puff pastry sheet onto a counter and roll it out to 1/8-inch thick. Trim a few inches of the dough off the ends to square it off (save the scraps). Cut the Brie through the equator into two pieces and place one half on the puff pastry, cut side up. Spread the jam on the cheese and sprinkle with the almonds. Replace the top half of the Brie.Wrap the dough up and over the Brie, and brush with egg wash to secure. Place the Brie package on a nonstick baking sheet, seam side down. Cut designs from the dough scraps and decorate the top of the dough, then brush with the egg wash. Bake for 18-20 minutes, or until golden brown.Serve with the crackers alongside.    * Toast nuts in a dry skillet over medium-high heat for 6-7 minutes, stirring or tossing often, just until lightly golden. Remove the toasted nuts from the skillet immediately, as the heat of the skillet will continue to toast the nuts. Cool completely. Alternatively, you can spread the nuts on a baking sheet and toast them in a 350°F oven or toaster oven, stirring once or twice.

  • While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.
