All the goodness of French Toast made without eggs. My husband came up with the recipe for our son, who is allergic to eggs and other foods. Serve with syrup and confectioners' sugar.

1 cup milk
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
4 slices white bread
1 teaspoon butter

Steps:

  • Whisk milk, cinnamon, and vanilla extract together in a shallow bowl.
  • Press each slice of bread lightly into the milk mixture to coat both sides, removing it before it gets soaked.
  • Melt butter in a skillet over medium heat. Cook coated slices in batches until golden brown and somewhat firm, 5 to 8 minutes per side.

1 cup milk ((240 ml) (I used 2%))
1/3 cup cornstarch ((50 g))
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
3 tablespoons granulated sugar ((36 g))
¼ teaspoon black salt
1 tablespoon nutritional yeast
1 teaspoon pure vanilla extract
4 - 6 tablespoons unsalted butter ((56 - 84 g))
6 slices bread ((thick slices, approx.1-inch))
Confectioner’s sugar ((powdered sugar), for dusting (optional))
Pure maple syrup, (for serving (optional))
Fresh berries, (for serving (optional))

Steps:

  • Mix milk, cornstarch, cinnamon, sugar, black salt, nutritional yeast, and vanilla in a shallow baking dish.
  • Dip bread in milk mixture, turning to coat both sides evenly.
  • Heat 2 tablespoons butter in a skillet over medium heat. Fry the bread slices until golden brown, 3 - 4 minutes per side. Wipe skillet, and repeat with remaining butter, and bread.
  • Dust with confectioner’s sugar, if desired, and serve warm with pure maple syrup and fresh berries.
