When I was younger I used to love my best friend's mom's sausage and rice caserole. I had no real idea how to cook or follow a recipe. I just made this one up and you know what I still love it. It is my son's all time favorie meal still to this day. I have handed it on to my friends and sister in law and their kids love it too. I hope you like it.

4 cup(s) white rice, cooked (i use minute rice)
1 pound(s) breakfast sausage, browned (i use jimmy dean)
4 - eggs, scrambled

Steps:

  • Mix together the browned sausage, scrambled eggs and cooked rice. Salt and pepper to taste and that is it!

2 cups cooked rice
1-1/4 cups cooked bulk pork sausage (1/2 pound uncooked)
1/4 cup thinly sliced green onions
4 eggs
3/4 cup milk
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large skillet over medium heat, combine rice, cooked sausage and onions; heat through. In a bowl, beat eggs, milk, oregano, salt and pepper; add to rice mixture. Cook and stir until the eggs are completely set.

  • Heat 2 tablespoons of the vegetable oil in a wok or large frying pan over high heat. Add the onion, spring onion and garlic and stir-fry for half a minute or until just softened. Add the Chinese sausage and stir-fry for a minute or until the sausage is just starting to char. Then push everything to one side. Pour the extra teaspoon of oil into the empty side. Then add the egg to the oil. Use a spatula to move the egg around so that it forms a thin omelette. Once the egg is almost set, break it up and mix it into the other ingredients. Add the rice, soy sauce, fish sauce and pepper. Stir-fry until well combined.
