Number Of Ingredients 19

For the filling:
One 8-ounce package of cream cheese
2 cups of creamy peanut butter
2 cups of sugar
1 stick of unsalted butter
1/2 cup of heavy cream
1 tablespoon of vanilla extract
For the topping:
1 cup sugar
1 cup buttermilk
1 cup self-rising flour
For the preparing:
An oven, preheated to 350 degrees
One 9x9 casserole dish or pie plate
Cooking Spray
One big mixing bowl (the bigger the better)
One double boiler (or make one with a metal mixing bowl and a saucepan. Make sure the mixing bowl will fit down into the saucepan without going all the way down. Fill the saucepan with water, bring to a boil, and position mixing bowl over the water)
A wire whisk
A plastic spatula or spoon

Steps:

  • In your big mixing bowl, add in the sugar, buttermilk, and flour for the topping. Whisk all this together until it’s all combined. Set aside.
  • Add cream cheese, peanut butter, sugar, heavy cream, and vanilla extract into your double boiler. Allow it to soften for about 10 minutes. Once the cream cheese and peanut butter become flexible, give it a good mixing up with your wire whisk. Continue to allow it to cook, whisking every five minutes until a smooth filling forms. This usually takes about 30 minutes. Set aside and cool for about 15 minutes.
  • Spray your casserole dish with cooking spray and fold the peanut butter mixture evenly into the bottom. Break the butter into about 9 pieces and dot it evenly across the filling. With your spatula or spoon, pour the topping mixture over the top of your peanut butter filling. You will want to cleanly scrape out all the batter over the cobbler.
  • Place your cobbler dish into the middle rack of your oven and bake until the topping is golden brown. This typically takes 45 minutes to an hour. I usually set the timer at 45 minutes and check on the cobbler. If it is not golden brown, I cook it in ten-minute interims until it is has transformed into peanut butter Delicious Goodness. When it’s ready to devour, take it out of the oven and allow it to cool at least 30 minutes.

This is a little concoction I came up with to satisfy my sweet tooth and peanut butter cravings, while keeping some healthy aspects in mind such as fruit and fiber.

Number Of Ingredients 6

1/2 cup Fiber One cereal
1 tablespoon flour
1 tablespoon reduced-fat peanut butter
1 teaspoon honey
1 teaspoon brown sugar
1 cup fresh fruit

Steps:

  • Preheat toaster oven to 350.
  • Put fiber one in a sealed plastic bag and crush till it is fine.
  • Add flour, and brown sugar to the bag and mix.
  • Add peanut butter and honey to the dry mixture in bag. Mix ingredients till it is well incorporated. It will be a crumbly mixture but should be able to hold it's form. If necessary, you can add some water to the mix.
  • Press half of the mixture into the bottom of a ramekin and bake for about 10 minutes.
  • Remove the ramekin from the over, add fruit then top with the remaining mixture.
  • Bake for an additional 5 to 10 minutes. Watch to make sure the topping does not burn.
