To use in recipes that call for peanut butter for those with peanut allergies. Cooking time does not include roasting sunflower seeds.

Number Of Ingredients 2

1 cup sunflower seeds, roasted and salted
1 teaspoon sunflower oil

Steps:

  • You can buy your sunflower seeds roasted or roast them yourself. To roast sunflower seeds put them unshelled, in a 300* F oven for thirty minutes. For a fully roasted taste, leave them in the oven for sixty minutes. Allow them to cool, then remove the shells. You can roast the shelled sunflower seeds but the flavor is better with the shells left on - they will not take as long unshelled.
  • Combine sunflower seeds with oil in a blender or food processor and blend, stopping periodically to scrape the sides of the blender. You may need to add more oil, 1/2 t at a time blending between additions. Add a bit of salt to taste.
  • You should store this in the refrigerator. If the oil seperates just stir it up.

There are lots of recipes for energy bars out there, but most homemade energy bars include peanuts. DS's den had a scout with peanut allergies, so I always had to find peanut free recipes. This is an easy "energy bar" recipe you can use. If you don't have any nut allergies, you can include peanut butter or nuts as an optional ingredient. Note: Sunflower seeds can be a problem for a subset of people with nut allergies, so if you are not sure, ask before you use them. Homemade Energy Bars Recipe (Peanut Free) These energy bars can be customized to use your favorite ingredients. Start with the base and then add anything you like. Ingredients   1 1/4 cup flour can use whole wheat for half1 cup firmly packed brown sugar1/2 tsp baking soda1/2 tsp salt1/2 cup butter1 tsp vanilla1 egg1 cup quick cooking oats1/2 cup chocolate chips1/4 cup sunflower seeds Optional Ingredients 1/2 cup peanut butter if no allergies1/4 cup nuts if no allergies1/2 cup wheat germ1/2 cup coconut1/2 cup raisins or dried cranberriesAny other favorite ingredients Instructions  Combine flour, brown sugar, baking soda, salt, butter, vanilla, and egg.Beat until well blended.Stir in oats.Add one or two of the optional ingredients if desired.Press dough into a greased 13 x 9 inch pan.Sprinkle with chocolate chips and sunflower seeds.Bake at 375 for 15 to 20 minutes.Cut into bars.
